HOMEMADE LAVENDER HONEY

Homemade Lavender Honey image

In Provence, lavender honey is made by the bees that frequent the wild purple-budded bushes growing near their hives. Be aware that this homemade version, infused with lavender flowers, needs to stand for 24 hours before being used. If you purchase dried lavender flowers, be sure that they are culinary quality. A lovely gift! From "From the Cook's Garden".

Tips:

  • Choose the right lavender: Culinary lavender is best for this recipe. It has a milder flavor than other varieties and won't overpower the honey.
  • Use fresh lavender blossoms: Fresh lavender blossoms will give your honey the best flavor. If you can't find fresh lavender, you can use dried lavender buds, but they will not be as flavorful.
  • Don't overheat the honey: Honey should not be heated above 140 degrees Fahrenheit, or it will lose its beneficial properties.
  • Let the honey infuse for at least two weeks: The longer you let the honey infuse, the more flavorful it will be. You can let it infuse for up to six weeks.
  • Store the honey in a cool, dark place: Honey should be stored in a cool, dark place away from direct sunlight. This will help to preserve its flavor and quality.

Conclusion:

Lavender-infused honey is a delicious and versatile ingredient that can be used in a variety of recipes. It can be added to tea, yogurt, oatmeal, or smoothies. It can also be used as a glaze for chicken or fish, or as a marinade for meat. No matter how you use it, lavender-infused honey is sure to add a unique and flavorful touch to your dishes.
