Number Of Ingredients 4

4 cups water
1/2 cup sugar
3 tablespoons dried lavender blossoms
4 1/2 cups sparkling water, chilled

Steps:

  • Bring water and sugar to a boil in a large saucepan, stirring until sugar dissolves. Add lavender; remove from heat. Let stand for 30 minutes. Strain. Return to pan, and boil until reduced by half, about 5 minutes. Let cool completely. Fill each of 6 glasses with 3/4 cup sparkling water. Stir 1/4 cup syrup into each.

Number Of Ingredients 7

1 ounce Tea Simple Syrup, recipe follows
1 1/2 ounces gin, such as Beefeater 24
1/2 ounce lemon juice
Vanilla bean club soda, such as Dry
Lavender sprig, if desired
1/4 cup chamomile-lavender loose-leaf tea
1/2 cup sugar

Steps:

  • Fill a tall glass with ice. Add the tea syrup, gin and lemon juice. Stir with a cocktail spoon. Top off with the vanilla bean soda. Serve garnished with a lavender sprig if desired.
  • Combine the tea, sugar and 1 cup water in a small saucepan. Place over medium heat and cook, stirring often, until the mixture comes to a boil and the sugar is dissolved. Reduce the heat to low and simmer for 5 minutes. Turn off the heat and allow the tea to steep for 5 minutes. Strain through a fine-mesh strainer. Let cool completely before using.

STRAWBERRY AND LAVENDER PASTIS SPRITZER



Strawberry and Lavender Pastis Spritzer image

Cool and refreshing, this spritzer is like summer in a glass! Wonderful! Add as much or as little pastis as you like. I used R.W. Knudsen Tangerine Spritzer (non-alcoholic) for the tangerine juice and sparkling water (and the data base didn't recognize this). Sweeten to taste with sugar or honey, as desired. Enjoy!

3 ounces tangerine juice
3 ounces sparkling water
1 -2 teaspoon pastis (to taste)
3 fresh strawberries, sliced
1 sprig of fresh lemon verbena (or lemon balm)
fresh lavender flowers
ice

Steps:

  • Rub rim of glass with a lavender flower and lemon verbena leaf (or lemon balm).
  • Pour in the tangerine juice and sparkling mineral water; stir in the pastis (to taste).
  • Add sliced strawberries and ice.
  • Serve decorated with sprigs of fresh lemon verbena (or lemon balm) and lavender flowers. Enjoy!
