- Slice the leftover fries so pieces are all about the same size. Chop onions and peppers. Preheat skillet, then add butter or margarine and oil. Heat until sizzling, then add onion and peppers. Sauté until softened. Add potatoes and seasoning to the pan and mix everything together. Keep stirring until the potatoes are heated through.

- Bring large pot of salted water to boil. Line large baking sheet with several layers of paper towels. Cut 1 potato lengthwise into 1/4-inch-thick slices. Stack 2 to 3 potato slices at a time and cut lengthwise into 1/4-inch-wide sticks. Cook potato sticks in boiling water just until beginning to soften, 3 to 4 minutes. Using slotted spoon or tongs, transfer potato sticks to paper-towel-lined baking sheet to drain. Repeat cutting, blanching, and draining remaining potatoes. Pat potato sticks dry with additional paper towels. DO AHEAD: Can be made 4 hours ahead. Let stand uncovered at room temperature.
- Pour enough canola oil into heavy large pot to reach depth of 4 inches. Attach deep-fry thermometer to side of pot; heat oil to 350°F. Working in batches, add potato sticks to oil and fry until golden brown, about 6 minutes. Transfer to clean paper towels to drain. Sprinkle with salt and pepper. Serve immediately.

A friend gave me this recipe a few years ago and it's still a family favorite. Try the recipe as is, or use cream of chicken soup for a different taste.

- Preheat oven to 400 degrees F (200 degrees C), and grease a 9x13 inch baking dish.
- Heat the oil in a skillet, and cook and stir the ground beef, onion, and green pepper over medium heat for about 15 minutes, until the meat is crumbly and no longer pink and the onion is translucent. Season with salt and pepper to taste, and stir in the condensed mushroom soup. Bring the mixture to a simmer over medium-low heat.
- Scoop the cheese sauce into a microwaveable bowl, and melt on low power for about 30 seconds.
- Place the ground beef mixture into the bottom of the prepared baking dish, and spread an even layer of the melted cheese sauce over the ground beef. Top with frozen shoestring fries. Bake in the preheated oven for about 20 minutes, until the fries are starting to turn golden.

- Over medium heat, saute chopped onion in a dash of olive oil and a pinch of salt until translucent, Chop fries into small pieces and add to skillet. Toss well and cover pan. Cook, stirring frequently, until potatoes start to crisp up. Season to taste - I used paprika, onion powder, cayenne, salt and pepper to taste. Continue to cook until most of the potatoes are crispy. Serve with eggs.
