1 cup chopped pecans
1 cup butter, melted
LEMON LAYER:
1-1/2 cups sugar
1/4 cup cornstarch
1/4 cup all-purpose flour
1-3/4 cups cold water
3 large egg yolks, beaten
2/3 cup lemon juice
2 tablespoons butter
4 teaspoons grated lemon zest
CREAM CHEESE LAYER:
1 package (8 ounces) cream cheese, softened
3 cups confectioners' sugar
1 carton (8 ounces) frozen whipped topping, thawed

Steps:

  • In a small bowl, combine flour and pecans; stir in butter. Press into an ungreased 13x9-in. baking dish. Bake at 350° for 18-20 minutes or until light golden brown. ½ cup white sugar
2 cups all-purpose flour
4 eggs
1 ½ cups white sugar
¼ cup all-purpose flour
2 lemons, juiced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, blend together softened butter, 2 cups flour and 1/2 cup sugar. Press into the bottom of an ungreased 9x13 inch pan.
  • Bake for 15 to 20 minutes in the preheated oven, or until firm and golden. In another bowl, whisk together the remaining 1 1/2 cups sugar and 1/4 cup flour. Whisk in the eggs and lemon juice. Pour over the baked crust.

1 large angel cake or 2 angel cake loaves
1 envelope unflavored gelatin
1/2 cup cold water
3/4 cup lemon juice
1 1/4 cups sugar
6 eggs, separated
2 tablespoons grated lemon rind
2 cups heavy cream
2 tablespoons rum
1 pint strawberries, sliced and lightly sugared

Steps:

  • Break angel cake into walnut-size pieces and put in a bowl.
  • Sprinkle gelatin over water in a bowl.
  • In top of a double boiler, mix lemon juice with half-cup sugar, egg yolks and lemon rind. Stir and cook over hot water until thick. Remove from heat and stir in gelatin mixture. Set aside to cool.
  • Beat egg whites until foamy. Gradually beat in remaining 3/4 cup sugar until mixture is stiff. Fold into yolk mixture.
  • Beat one cup of cream until stiff and fold into yolk mixture. Fold mixture into angel cake pieces.
  • Place into 10-inch springform pan. Refrigerate for several hours or overnight.
  • When ready to serve, beat remaining 1 cup cream until stiff. Fold in rum. Spoon over top of trifle and top with sugared berries. Remove ring from springform and serve.
