BLACKBERRY-LEMON PUDDING CAKE

Blackberry-Lemon Pudding Cake image

I grew up in Texas, where every summer I looked forward to picking dewberries. The berries were so good that not even the threat of snakebite could scare me away. Now I live in Colorado and have since fallen in love with the state's sweet blackberries. I combined the berries with a light and airy lemon meringue batter to create this world-class dessert. -Karen Harris, Littleton, Colorado

Tips:

  • Use fresh lemons and blackberries: Fresh lemons and blackberries will give your cake the best flavor. If you can't find fresh blackberries, you can use frozen blackberries that have been thawed and drained.
  • Don't overmix the batter: Overmixing the batter will make your cake tough. Mix just until the ingredients are combined.
  • Bake the cake until a toothpick inserted into the center comes out clean: This is the best way to tell if your cake is done baking.
  • Let the cake cool completely before frosting it: This will help prevent the frosting from melting.
  • Store the cake in an airtight container at room temperature for up to 3 days: You can also store the cake in the refrigerator for up to 1 week.

Conclusion:

This lemon blackberry cake is a delicious and easy-to-make dessert that is perfect for any occasion. The cake is moist and flavorful, with a perfect balance of sweet and tart. The frosting is light and fluffy, and it complements the cake perfectly. Whether you are a beginner baker or a seasoned pro, this cake is sure to be a hit.
