BAKED ALFREDO PASTA WITH BROCCOLI RABE AND LEMON

Baked Alfredo Pasta With Broccoli Rabe and Lemon image

One of the great things about baked pastas is that you can get two different textures in one dish. Take the typical pasta Alfredo that's prepared in a skillet: It's delightfully creamy and lush, but the same, bite after bite. But add a green vegetable to that Alfredo pasta, pile it into a dish, top it with melty cheese and a crunchy bread crumbs, then bake it, and you get a vegetarian dinner that's got it all. If broccoli rabe isn't your thing, you can substitute cut asparagus or broccoli florets.

Time 35m

Yield 4 to 6 servings

Number Of Ingredients 11

Kosher salt
8 tablespoons unsalted butter, cut into 1-inch pieces
1/2 cup panko bread crumbs
2 cups finely grated Parmesan
1 teaspoon fresh lemon zest (from 1 lemon)
Black pepper
1 pound casarecce, cavatappi or other small tubed or curly pasta
1 bunch broccoli rabe, trimmed, then cut into 1/2-inch pieces
1 cup heavy cream
1 small garlic clove, grated
6 ounces fresh mozzarella, cut into 1/2-inch pieces

Steps:

  • Heat the oven to 500 degrees. Bring a large pot of generously salted water to a boil. Place the butter in a 9-by-13-inch/3-quart pan or baking dish and transfer it to the oven to melt while the oven heats; remove it from the oven once it's melted.
  • In a small bowl, stir together the panko, 1/4 cup Parmesan and the lemon zest. Add 1 tablespoon of the melted butter from the baking pan, stir until the panko is moistened with butter, then season with salt and pepper.
  • When the water's boiling, add the pasta and cook until al dente, about 2 minutes less than the package instructions suggest. During the last minute of cooking, add the broccoli rabe. Reserve 1/2 cup pasta water, then drain the pasta and broccoli rabe.
  • Whisk the cream, garlic and pasta water into the melted butter in the baking dish until smooth. Add the remaining Parmesan in large handfuls, vigorously whisking until smooth and combined. Add the pasta, broccoli rabe and half the mozzarella. Taste, and season well with salt and pepper. Stir until very combined.
  • Top with the remaining mozzarella, then sprinkle evenly with the panko mixture. Bake until the mozzarella has melted and the panko is golden brown, 10 to 15 minutes.

CREAMY LEMON CHICKEN PASTA WITH BROCCOLI RECIPE - (4.3/5)

Creamy Lemon Chicken Pasta with Broccoli Recipe - (4.3/5) image

Provided by CandyH

Number Of Ingredients 14

1 1/2 pounds chicken breasts, cubed
Salt and pepper
1 tablespoon oil
4 cloves garlic, finely minced or pressed
1/2 teaspoon dried basil
2 1/2 cups water
2 cups low-sodium chicken broth
Zest of two lemons, about 1 tablespoons
1/3 cup freshly squeezed lemon juice (from about 2 lemons, use the same ones you just zested)
12 ounces penne pasta (see note)
2-3 cups chopped fresh broccoli florets
3/4 cup milk
1 tablespoon cornstarch
1/2 cup freshly grated Parmesan cheese

Steps:

  • 1.Pat the chicken dry with a paper towel and season well with salt and pepper. Heat the oil in a large, 12-inch nonstick skillet over medium heat until the oil is hot and rippling. Add the chicken and saute, stirring frequently, until the chicken is browned and cooked through. Remove the chicken to a plate, keeping as much oil/liquid in the skillet as possible. 2.Keep the skillet on medium heat and add another teaspoon of oil if needed. Add the garlic and basil and stir constantly for about 30 seconds. Add the water, broth, lemon juice and pasta. Stir to combine. 3.Bring the mixture to a simmer and cook, stirring occasionally just to keep the pasta from sticking, for 10-12 minutes until the pasta is tender - it will cook for a few more minutes in the next step. There will be a bit of liquid left in the skillet; that's ok. 4.Add the broccoli and lemon zest. Cover and cook for 2-3 minutes until the broccoli is bright green and tender. While the broccoli is cooking, whisk together the milk and cornstarch. 5.Uncover the skillet and stir in the milk mixture along with the Parmesan cheese and reserved chicken. Simmer, uncovered, until the sauce has thickened slightly, 1-2 minutes. 6.Season with additional salt and pepper (this is really important - don't skip this step!) and serve.

Tips:

  • Choose the right broccoli: Look for broccoli with tight florets and a deep green color. Avoid broccoli with yellow or wilted florets.
  • Cook the broccoli properly: Broccoli should be cooked until it is tender-crisp. Overcooked broccoli will be mushy and lose its flavor.
  • Use a good quality pasta: The type of pasta you use will make a big difference in the final dish. Use a pasta that is made with high-quality ingredients and has a good texture.
  • Don't overcrowd the pan: When cooking the pasta, don't overcrowd the pan. This will prevent the pasta from cooking evenly.
  • Season the pasta well: Season the pasta with salt, pepper, and other spices to taste. This will help to enhance the flavor of the dish.
  • Add the broccoli and lemon at the end: Add the broccoli and lemon to the pasta at the end of the cooking process. This will help to preserve the broccoli's nutrients and flavor.
  • Serve immediately: Lemon broccoli pasta is best served immediately. This will help to prevent the pasta from becoming soggy.

Conclusion:

Lemon broccoli pasta is a quick, easy, and delicious meal that is perfect for a weeknight dinner. It is also a healthy meal that is packed with vitamins and minerals. With its bright flavors and simple ingredients, lemon broccoli pasta is sure to be a hit with your family and friends.
