1 kg steamed cauliflower floret
1 kg snow peas or 1 kg beans
2 tablespoons butter
1 teaspoon garlic paste
4 teaspoons sugar

4 tablespoons cornflour
600 ml vegetable stock
4 tablespoons lemon juice

1 teaspoon salt
1 teaspoon rosemary, crushed
1/2 teaspoon cracked black pepper
2 -3 tablespoons balsamic vinegar
1/2 cup dry mustard
1/2 cup white wine vinegar
1/2 cup cider vinegar
1/3 cup honey or 1/3 cup agave syrup
1 teaspoon sea salt
6 large egg yolks
1 tablespoon grated lemon zest
1 tablespoon lemon juice

  • Vegetables use in any desired amounts: carrots, onions, celery, garlic, turnips, white potatoes, sweet potatoes, beets, fennel and parsnips. quarter the onions so they stay together. garlic should be peeled whole cloves.
  • Not using clay pot:.
  • Preheat oven to 300°F lightly spray a deep lasgne or roasting pan then place vegetables in pan and drizzle with oil and toss to coat.

1 1/2 pounds brussels sprouts, trimmed, halved lengthwise

5 tablespoons plus 1 teaspoon extra-virgin olive oil
1 whole garlic head, top 1/2 inch trimmed
1/4 cup balsamic vinegar
2 teaspoons grated lemon peel

Steps:

  • Preheat oven to 450°F. Cook beets in medium pot of boiling salted water until almost tender, about 15 minutes. Drain. Transfer beets to large roasting pan. Add sweet potatoes, squash, brussels sprouts and rosemary to pan. Drizzle with 2 tablespoons oil; sprinkle generously with salt and pepper. Toss to coat.
