I found this lemon pie recipe a couple of years ago and made it for a dinner party. There were about 4 other pies and this is the only one that was gone. I have been making it ever since and because lemons are great all year 'round. All holidays or any day is a wonderful occasion.

Time 4h10m

Number Of Ingredients 5

6 ounces lemon jello
2 cups boiling water
8 ounces cream cheese, (softened)
20 ounces crushed pineapple with juice
16 ounces whipped topping, (use only 12-ounces for the fluff and reserve four ounces for topping and garnishing)

Steps:

  • In a medium-sized bowl, add the jello and carefully pour in the boiling water. Using a whisk, stir until dissolved. Set aside to cool, about 20 minutes.
  • In a large bowl, add the softened cream cheese and crushed pineapple. Using a hand mixer on low speed, mix together the cream cheese and pineapple, gradually increasing the mixer speed to medium-high. Mix together for about one minute until fully combined. There may be small flecks of cream cheese, and that's okay.
  • Pour the cooled jello liquid into the cream cheese and pineapple mixture. Using the hand mixer, start on low speed so it doesn't splash around a lot and begin to mix, gradually increasing the speed to medium until it is well-combined.
  • Add the 12 ounces of Cool Whip. Begin with a low speed on a hand mixer and gradually increase the speed to medium-high until well-combined, about two minutes. It will still be in liquid form but trust the jello to do its work and it will solidify as it chills.
  • Pour into a large glass serving bowl, cover with cling wrap and chill for at least four hours or until ready to serve. You can also use a 9x13 pan as an option instead.
  • Serve with a dollop of Cool Whip and fresh berries or other fruit as garnish if desired.

Time 15m

Number Of Ingredients 4

1 box (3 oz) box lemon jello
12 oz ctn cool whip
1 large pkg cream cheese
1 can(s) (20 oz) crushed pineapple

Steps:

  • 1. Cut cream cheese into small squares.
  • 2. Drain pineapple, keeping juice. Bring juice to boil, and add to dry jello.
  • 3. Using a mixer add pineapple and cream cheese to jello.
  • 4. Refrigerate until partially set. Fold in cool whip and refrigerate, till ready to serve. at least an hour.

Tips:

  • Choose the right gelatin. Unflavored gelatin is the best choice for this recipe because it allows you to control the sweetness and flavor of the pie. You can also use flavored gelatin, but be sure to adjust the amount of sugar you add accordingly.
  • Use fresh lemon juice. Fresh lemon juice gives the pie a brighter, more tart flavor than bottled lemon juice. If you don't have fresh lemon juice on hand, you can use bottled lemon juice, but be sure to add a little bit of lemon zest to brighten up the flavor.
  • Don't overbeat the whipped cream. Overbeaten whipped cream will be stiff and grainy. You want the whipped cream to be soft and fluffy, so be sure to stop beating it as soon as it holds peaks.
  • Chill the pie before serving. Chilling the pie allows the gelatin to set properly and gives the flavors time to meld together. For best results, chill the pie for at least 4 hours before serving.

Conclusion:

Lemon Jello Fluff Pie is a light, refreshing, and delicious dessert that is perfect for any occasion. It is easy to make and can be customized to your liking. Whether you like your pie tart or sweet, with or without whipped cream, Lemon Jello Fluff Pie is sure to please everyone at your table.
