LEMON MARINADE (CHICKEN)
Another good recipe from local news chef, Chef Walter. A nice change from the usual lemon pepper marinade on store shelves. This recipe is enough for 2 pounds of boneless skinless chicken breasts. Prep time is marinade time. Note: feel free to cut back or eliminate the salt in this marinade. Low-sodium soy sauce also works well for this. (Thanks for the tip, Nif!)

EASY NO-FAIL LEMON CHICKEN MARINADE
This just might be the best chicken marinade, ever. It's incredibly versatile. Use for marinating chicken, turkey, pork, fish, shrimp, tofu or vegetables. When marinating meats and poultry, marinate at least 1 hour or overnight. When marinating something more delicate like fish, you only need to marinate 1 to 2 hours. You can also use this to baste while cooking or grilling, if you plan to do this, simply set a portion of the prepared marinade aside for basting. **This makes enough to marinate 2 to 2 ½ pounds of chicken.

Steps:
- Whisk lemon juice, olive oil, mustard, salt, red pepper flakes and black pepper together until the salt has dissolved. Stir in the garlic, lemon zest and herbs (if using). Refrigerate and use within 1 to 2 hours.
- To marinate chicken, add the marinade and chicken to a resealable food-safe bag or container and marinate in the refrigerator. Since this is so flavorful, even 20 minutes will work wonders. We don't recommend marinating more than a day in advance since the lemon in the marinade can cause the chicken to toughen.

LEMON HERB MARINADE
This easy Lemon Herb Marinade can be whipped up in 10 minutes. Zesty herbs and simple ingredients work together to elevate chicken, fish or pork. Feel free to switch up the herbs you use in this Lemon Herb Marinade. For example, for a lemon-rosemary marinade, consider substituting parsley for the basil and rosemary for the thyme. A good rule of thumb when mixing up marinades is, for fish, chicken and pork, light herbal notes tend to work well. This lemon and herb marinade is not to be missed.

Steps:
- In a liquid measuring cup, combine marinade ingredients. Reserve 1/4 cup and pour remaining marinade into a zip-top bag. Add 1 1/2 pounds meat (for 4 people) and toss to coat. Refrigerate. Use reserved marinade to brush over meat and vegetables while grilling.
Tips:
- Use fresh herbs and spices: Fresh herbs and spices are more flavorful than dried ones, so use them whenever possible. If you don't have fresh herbs on hand, you can substitute dried herbs, but use half the amount called for in the recipe.
- Don't overcrowd the chicken: When you're marinating chicken, make sure there's enough marinade to cover the chicken completely. However, you don't want to overcrowd the chicken, or the marinade won't be able to penetrate the meat. If you're marinating a lot of chicken, use a large container or divide the chicken between two or more containers.
- Give the chicken time to marinate: The longer the chicken marinates, the more flavor it will absorb. However, don't marinate the chicken for too long, or the meat will become tough. For best results, marinate the chicken for at least 30 minutes, but no longer than 24 hours.
- Cook the chicken thoroughly: Once the chicken is marinated, cook it according to the recipe instructions. Make sure the chicken is cooked through before serving. You can check the doneness of the chicken by inserting a meat thermometer into the thickest part of the meat. The chicken is cooked when the internal temperature reaches 165 degrees Fahrenheit.
Conclusion:
Lemon marinade is a versatile marinade that can be used to flavor chicken breasts, thighs, or wings. It's a great way to add flavor to grilled, roasted, or baked chicken. The marinade is easy to make and can be used on chicken that's been frozen or thawed. With just a few simple ingredients, you can create a flavorful and juicy chicken dish that your family and friends will love.
