LEMON VINAIGRETTE DRESSING

Lemon Vinaigrette Dressing image

This vibrant dressing requires extra-virgin olive oil, freshly squeezed lemon juice, and fresh oregano. Toss it with baby greens for a cooling side dish salad. Or, use torn romaine lettuce and add tomato chunks, chopped cucumber, crumbled feta cheese, and sliced olives to make the salad more substantial. I got this recipe from a local news television channel.

This vinaigrette, almost a pesto, is also good for drizzling over grilled vegetables.

Provided by Martha Stewart

Yield Makes 1 cup

Number Of Ingredients 6

1/4 cup fresh lemon juice
2 small bunches fresh oregano (about 1/2 cup leaves)
3/4 cup extra-virgin olive oil
2 whole cloves garlic
2 tablespoons capers, drained and rinsed
Freshly ground pepper to taste

Steps:

  • Combine all ingredients in a blender and mix until smooth. Refrigerate, tightly covered, for up to 1 week.

Tips:

  • Fresh herbs: Use fresh oregano for the best flavor. If you don't have fresh oregano, you can use 1 teaspoon of dried oregano.
  • Lemon zest: Be sure to use the zest of an unwaxed lemon. This will give your dressing a brighter, more citrusy flavor.
  • Olive oil: Use a good quality extra virgin olive oil. This will also help to give your dressing a more robust flavor.
  • Salt and pepper: Season your dressing to taste. Start with a small amount of salt and pepper and then add more to taste.
  • Storage: Store your dressing in a jar or container with a tight-fitting lid in the refrigerator for up to 5 days.

Conclusion:

Lemon oregano dressing is a versatile dressing that can be used on a variety of salads, grilled meats, and vegetables. It is also a great way to add a pop of flavor to your favorite dishes. With its bright citrusy flavor and herbaceous notes, lemon oregano dressing is sure to please everyone at your table.
