TUSCAN LEMON PEPPER CHICKEN BREAST (SERVED COLD)

Tuscan Lemon Pepper Chicken Breast (Served Cold) image

I use this chicken for sandwiches and salads mostly and have received quite a few compliments on it. I mostly just wing this recipe so the spice measurements are an estimation, I usually just do everything to taste. Do everything on low heat so the chicken remains juicy.

Tips:

  • To ensure the chicken breasts cook evenly, pound them to an even thickness before cooking.
  • Use a flavorful marinade to infuse the chicken with flavor. The recipe in the article uses a simple marinade made with lemon juice, olive oil, garlic, and herbs, but you can use any marinade you like.
  • Cook the chicken over medium heat to prevent it from drying out. If you cook it over high heat, the outside of the chicken will cook too quickly and the inside will be undercooked.
  • Use a meat thermometer to ensure the chicken is cooked to an internal temperature of 165 degrees Fahrenheit (74 degrees Celsius).
  • Let the chicken rest for a few minutes before serving to allow the juices to redistribute.
