LEMON TEA COOKIES

Lemon Tea Cookies image

Every year at the holidays, I make Russian tea cakes. This year, the man in my life said it reminded him of the lemon cookies he used to love so much from a bakery he frequented in another town. I tried several recipes I found online and none were right, so I just made my own instead!

Tips:

  • Use fresh lemons for the best flavor. If you don't have fresh lemons, you can substitute lemon extract, but the flavor will be less pronounced.
  • Be sure to cream the butter and sugar together until light and fluffy. This will help the cookies to be tender and chewy.
  • Don't overmix the dough. Overmixing will make the cookies tough.
  • Chill the dough for at least 30 minutes before baking. This will help the cookies to hold their shape.
  • Bake the cookies until they are just set. Overbaking will make the cookies dry and crumbly.
  • Let the cookies cool completely before frosting them. This will help the frosting to set properly.

Conclusion:

Lemon tea cookies are a delicious and refreshing treat that are perfect for any occasion. They are easy to make and can be customized to your liking. With a few simple ingredients, you can create a batch of cookies that will be enjoyed by everyone.
