Number Of Ingredients 9

2 stalks lemongrass
1 garlic clove, finely sliced
1 teaspoon fresh gingerroot, grated
1 pinch salt & freshly ground black pepper
2 boneless skinless chicken breasts
250 g broccoli florets
1/2 teaspoon cornflour, mixed with
2 tablespoons cold water
1/4 cup toasted almond

Steps:

  • Mix the lemon grass, garlic and ginger together, season with salt and freshly ground black pepper and rub over the chicken. Leave to marinate for 20 minutes.

  • Whilst cooking the fragrant chicken juices should have dripped down into the water to make a stock and evaporated to leave approximately a glass full of liquid (about 80-100ml - if you find you have too much liquid, bring to a fast boil and reduce).
  • Thicken the stock with cornflour and season if necessary.
  • To serve, arrange the chicken on a plate and scatter over the broccoli, and toasted almonds then drizzle with the sauce. Serve with steamed rice.

Time 45m

Yield 4-6 serving(s)

Number Of Ingredients 7

8 chicken thighs, trimmed of excess fat
salt and pepper
3 tablespoons grapeseed oil or 3 tablespoons other neutral oil
6 stalks lemongrass, trimmed, halved lengthwise, and smashed
3 tablespoons soy sauce
lime wedge
chopped cilantro

Steps:

  • Sprinkle the chicken with salt and pepper.
  • Put oil in a deep skillet over medium high heat.
  • Spread the lemongrass in the skillet.

  • When lemongrass begins to fry and is fragrant, place the chicken, skin side down over the lemongrass.
  • Turn the heat to medium, cover.
  • Cook, turning and basting with the soy sauce every 10 minutes or so until the chicken is cooked through, about 30 minutes.
  • Discard the lemongrass and serve the chicken with lime wedges and cilantro.

Tips:

  • Make sure to use fresh lemongrass for the best flavor. Cut the lemongrass into thin slices to release its aroma fully.
  • You can use a steamer basket or a colander placed over a pot of boiling water.
  • Start with a high temperature to bring the water to a boil quickly, then reduce the heat to a simmer to gently steam the chicken.
  • The cooking time will vary depending on the thickness of the chicken breasts. Check for doneness by inserting a meat thermometer into the thickest part of the chicken. The internal temperature should reach 165°F (74°C).
