1 pound orange lentils

  • In a large saucepan, over medium heat, add the oil. When the oil is hot, add the onions, celery, and carrots. Season with salt and pepper. Saute for 4 minutes. Add the garlic, bay leaves and thyme. Saute for 1 minute. Add the ham hocks and stock. Bring the liquid to a boil, reduce the heat to medium-low and cook about 1 hour, or until the hocks are tender. 2 tablespoons butter
1 cup finely chopped onions

5 cups fresh chicken broth or canned
2 cups water
1 bay leaf
3 sprigs fresh thyme or 1 teaspoon dried
Salt to taste
1 tablespoon red-wine vinegar
2 tablespoons finely chopped coriander

Steps:

  • Remove most of the fat from the ham and cut into 1/2-inch cubes.
  • Trim and scrape the carrots and cut them into 1/4-inch cubes.
  • Pick over the lentils, wash them and drain into a colander.
