This is from Southern Living May 2010. Full of flavor and so easy to do. The original recipe calls for 1/4 c of oil, but I changed it to be a little more health concious. I also used skinless bone in chicken breasts. Cheaper alternative to boneless skinless breasts.

2 cups cider vinegar
1/4 cup dark brown sugar, firmly packed
2 tablespoons vegetable oil
3 tablespoons dry crushed red pepper
4 teaspoons salt
2 teaspoons pepper
5 lbs chicken thighs, skinless bone-in

Steps:

  • Stir together first 6 ingredients until blended.
  • Divide vinegar mixture and chicken between 2 large zip-top plastic freezer bags, and seal bags. Chill 2 to 8 hours, turning bags occasionally.
  • Preheat grill to 350° to 400° (medium-high) heat. Remove chicken from marinade, discarding marinade.
  • Grill chicken, covered with grill lid, 35 to 40 minutes or until done, turning occasionally. ** I turn off the two center burners for the last 15 mins or so.
