LIME GELATIN SALAD I

Lime Gelatin Salad I image

This is a great recipe my mom got from my aunt. She has made it every year for Thanksgiving. It is a family tradition for us. It can be made a day or two ahead of time, if you like. It looks just beautiful in a cut crystal bowl. Thanksgiving is not the same without it for us! We just 'gobble' it up! Chopped walnuts can be substituted for chopped pecans.

Lime Cottage Salad image

This is a refreshing summer salad that goes with just about anything. This does not have as many ingredients as some do, but it is sooo good, and very easy to make as I usually have all three of the ingredients on hand most of the time. It is a pretty green and I just love it. We all do. I make it all year long. If you make it with the sugar-free jello and low-fat cottage cheese, it is a great Weight Watcher dish. I have used both kinds, and they both taste the same. It has only 1-2 points per serving.

We recently stayed in a villa in Bali. The cook made this dressing a couple of times to go over a salad of mixed greens tomatoes and cucumber. She included mint in the salad-not the dressing. Her recipe was actually just equal quantities of lime juice, white (not palm) sugar, and olive oil, garlic and slat and pepper, so it's super easy to make enough for 1 or 12.

FRUIT SALAD WITH HONEY-LIME DRESSING

Fruit Salad with Honey-Lime Dressing image

"I literally didn't know how to boil an egg until I was in my 20's - when I tried to impress a guy by making dinner for him," writes Sally Siegel of Pittsburgh, Pennsylvania. "I didn't have much success with the dinner or the guy, but I regrouped and put together a repertoire of fairly elegant dishes I felt confident making. Over the years, my cooking style has become more casual; I make dishes that are not too demanding, but still special for company."

Categories     Brunch     Dessert     No-Cook     Yogurt     Strawberry     Lime     Melon     Papaya     Pineapple     Summer     Chill     Healthy     Honey     Grape     Bon Appétit     Vegetarian     Pescatarian     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free     Kosher

Yield Makes 8 servings

Number Of Ingredients 10

1/2 cup plain yogurt
1/4 cup fresh lime juice
1/4 cup honey
1 teaspoon grated lime peel
2 cups diced peeled cantaloupe
2 cups diced peeled honeydew melon
2 cups seedless red or green grapes
2 cups diced peeled cored pineapple
1 1/2 cups diced peeled papaya
1 cup halved hulled strawberries

Steps:

  • Whisk first 4 ingredients in small bowl to blend; set dressing aside. Combine remaining ingredients in large bowl. Cover dressing and fruit separately and chill until ready to serve, up to 6 hours.
  • Mix dressing into fruit. Let stand 15 minutes to blend flavors.

Tips:

  • Choose fresh and ripe ingredients: Using fresh, ripe produce will ensure your lime salad is flavorful and delicious. Look for citrus fruits that are heavy for their size and have smooth, unblemished skin. Choose avocados that are slightly firm but yield to gentle pressure.
  • Balance the flavors: Lime salads should have a balance of sweet, sour, and savory flavors. Use sweet fruits like oranges or mangoes to balance the tartness of the lime juice. Add a touch of salt to enhance the other flavors.
  • Use a variety of textures: Incorporate a variety of textures into your lime salad to make it more interesting. Crunchy elements like toasted nuts or seeds add contrast to the soft fruits and creamy avocado.
  • Don't overdress the salad: Lime salads are best when the dressing is light and flavorful. Use just enough dressing to coat the ingredients without making them soggy.
  • Serve immediately: Lime salads are best served immediately after they are made. This will prevent the avocado from browning and the other ingredients from becoming limp.

Conclusion:

Lime salads are a refreshing and flavorful way to enjoy fresh fruits and vegetables. With a variety of recipes to choose from, there's a lime salad to suit every taste. Whether you're looking for a light and refreshing side dish or a more substantial main course, you're sure to find a lime salad recipe that you'll love.
