TEQUILA LIME SYRUP FOR FRUIT SALAD
This is lovely syrup used to brighten up the flavors of a simple fruit salad. The recipe comes to me from the Santa Fe Cooking School and works especially well as a light dessert after a Southwestern meal. The flavors are reminiscent of the popular mojito. I like it best with more tropical fruits like pineapple, mango and banana but find it works very well with summer fruits such as strawberries and grapes. One batch of syrup is plenty for 4-6 cups of fruit. You can prepare this days ahead of time and mix with the salad just before serving.

Yield Makes 2 1/2 cups.

Steps:
- In a saucepan combine the sugar with 2 cups water, bring the water to a boil over moderate heat, stirring until the sugar is dissolved, and add the lime rind. Cook the syrup, undisturbed, for 10 minutes. Let the syrup cool until it is lukewarm and strain it into a jar, pressing hard on the rind with the back of a spoon. The syrup keeps indefinitely, covered and chilled.
Tips:
- Use key limes. Key limes are smaller, more acidic, and have a more intense flavor than Persian limes. They are the traditional limes used in lime syrup, but you can use Persian limes if you prefer.
- Choose limes that are ripe and juicy. Ripe limes will have a deep green color and be slightly soft to the touch. Avoid limes that are hard or have any blemishes.
- Wash the limes thoroughly. Before juicing the limes, wash them thoroughly with soap and water. This will help to remove any dirt or bacteria.
- Zest the limes before juicing them. Zesting the limes will add a bright, citrusy flavor to the syrup. To zest the limes, use a microplane or fine grater to remove the outermost layer of the peel.
- Strain the syrup. After making the syrup, strain it through a fine-mesh sieve or cheesecloth to remove any pulp or seeds.
- Store the syrup in a sterilized jar. To store the syrup, pour it into a sterilized jar and seal it tightly. The syrup can be stored in the refrigerator for up to 2 weeks.
Conclusion:
Lime syrup is a versatile ingredient that can be used in a variety of cocktails, mocktails, and desserts. It is also a great way to add a bright, citrusy flavor to your favorite recipes. By following these tips, you can make a delicious and refreshing lime syrup that will add a special touch to your favorite dishes and drinks.
