Steps:

  • In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in the lime zest, lime juice and vanilla. Gradually add flour and mix well. Beat in food coloring. 2 teaspoons sea salt
2 teaspoons whole black peppercorns
4 to 6 tablespoons loose green tea
4 (6-ounce) boneless skinless salmon fillets

Steps:

  • Put the water into a straight sided skillet or pot with a lid. Add 3 of the lime halves (squeezing the juice into the water before adding), 5 tablespoons of the honey, the ginger, salt and peppercorns and bring to a boil over medium-high heat. Reduce the heat to a simmer, cover, and cook for 10 minutes to infuse the water with flavors. Remove and reserve 1/2 cup of this poaching liquid. Remove the pot from heat and add the tea. Allow the tea to steep for 3 to 5 minutes. Carefully slide the salmon into the water. Cover and poach until the fish is just cooked through and firm to the touch, about 6 to 7 minutes.

2 slice thin slices of fresh ginger, about 1 " dia.
1/2 c white sugar
1/4 c freshly squeezed lime juice. 2 to 3 limes

  • 1. Bring water and ginget to a boil. Pour water over the tea bags in a 4 cup heat proof measuring cup. Step 3 minutes. remove tea bags and ginger. discard. 12 tablespoons (1 1/2 sticks) unsalted butter, at room temperature
1 1/2 cups sugar
2 tablespoons freshly grated lime zest
2 large eggs, at room temperature
2 teaspoons fresh lime juice
2/3 cup buttermilk
For the glaze
2 cups confectioners' sugar
2 tablespoons fresh lime juice
2 tablespoons buttermilk

Steps:

  • Preheat the oven to 350˚F. Line two sheet pans with parchment paper or spray lightly with nonstick cooking spray.
  • Sift the flour, baking soda, and salt into a mixing bowl and set aside.
  • Beat the butter in the bowl of a standing mixer fitted with a paddle attachment at high speed until it is light and fluffy, about 3 minutes.
  • Add the sugar and lime zest and continue to mix on medium-high speed until smooth, about 1 minute. Scrape down the sides and bottom of the bowl with a rubber spatula halfway through mixing to ensure that the butter, sugar, and zest are well mixed.
  • Add the eggs and mix until combined. Again, scrape down the sides and bottom of the bowl to make sure that the ingredients are incorporated.
  • Add approximately half the flour mixture and mix on low speed just until the flour is incorporated, about 30 seconds. Add the lime juice and buttermilk and mix until combined, about 15 seconds.
  • Add the remaining flour and mix until combined, about 15 seconds. Remove the bowl from the mixer and scrape down the sides and bottom of the bowl with a rubber spatula to make sure that the flour is fully incorporated. Compared with other, drier cookie doughs, this dough has a more pasty consistency.
  • Using a small ice cream scoop or a tablespoon measure, scoop the cookie dough about 1/2 inch apart onto the prepared pans. Bake for 18 to 20 minutes, rotating the pans once halfway through, until the edges of the cookies are golden brown. Remove the cookies from the oven and let them cool on the pans to room temperature.
  • While the cookies are cooling, prepare the glaze. Sift the confectioners' sugar into a mixing bowl. Add the lime juice and buttermilk and mix with a fork until smooth.
  • Transfer the room-temperature cookies to a wire rack set over a sheet of parchment or waxed paper and spoon the glaze over them. Allow the glaze to set for 20 minutes.
  • Serve the cooled cookies immediately, or keep them in an airtight container at room temperature for up to 4 days.

  • Whisk the milk, eggs, and cornstarch together in a medium mixing bowl.

1 teaspoon lime zest
1/2 cup lime juice
2 large eggs
1/4 cup milk
1/2 cup sugar
1/2 cup lime juice
1/2 teaspoon lime zest
2 cups powdered sugar
3 tablespoons lime juice

Steps:

  • Preheat the oven to 350 degrees.
  • Beat the cake ingredients together for three minutes. Pour into 9 mini-loaf pans (or you could use a large Bundt pan) sprayed with non-stick spray. Bake 25 min (mini loaf pans) or until a toothpick comes out clean. Cool in pans on a wire rack.
  • In a small saucepan, stir together the syrup ingredients over medium low heat.

During the Summer I make several gallons of this iced tea. I never thought adding lime juice to iced tea, could taste sooo good! It's a nice change from the sweetened lemon iced tea I usually make.

6 cups boiling water
7 tea bags (l used orange pekoe & black)
3/4 cup sugar, plus 2-1/2 tablespoons of sugar
2 limes (plus half of one lime, see *note)

Steps:

  • 1. In a (2-quart) heat-proof glass pitcher, add the tea bags to it. (If the tea bags have strings attached, be sure to remove them first.)
  • 2. Pour boiling water over tea bags in the pitcher. Cover the pitcher, and allow tea to steep for 45 minutes. (I covered the pitcher with Saran Wrap.)
  • 3. After the has steeped for 45 minutes, remove tea bags from the pitcher, and discard them.
  • 4. To the pitcher, add the 3/4 cup of sugar, plus the 2-1/2 tablespoons of sugar; stir thoroughly to dissolve the sugar.
  • 5. Add the juice of 2 limes to the pitcher, and stir. (For more lime flavor, add the juice from half of a lime as well.)
  • 6. Let the tea cool to room temperature, then place tea in the refrigerator to chill.
  • 7. Pour chilled tea into glasses filled with ice. Serve tea immediately.
  • 8. *Note: For more lime flavor, add the juice of 2 and a 1/2 limes. Also, I usually double this recipe, and make the tea in a gallon size glass jar. Then I'll use 12 cups of boiling water, 14 tea bags, 1-1/2 cups of sugar, plus a 1/3 cup of sugar, and the juice of 4 limes (possibly 4-1/2 limes). This makes: 13-1/2 cups of tea (or) 105-ounces. One more thing I wanted to mention, if using a gallon size glass jar to make the tea, I'll cover the jar with an 8-1/2 inch glass dinner plate, while the tea is steeping.

1 cup butter, softened

3/4 cup chopped walnuts

Steps:

  • In large bowl, beat butter and 1/2 cup of the powdered sugar with electric mixer on medium speed 3 minutes or until fluffy. Stir in vanilla, limeade concentrate and lime peel. On low speed, beat in flour, graham cracker crumbs and salt just until blended. Fold in nuts. Cover; refrigerate 1 hour.
  • Heat oven to 400°F. Shape dough into 36 (1 1/4-inch) balls. On ungreased cookie sheets, place balls 1 inch apart.
  • Bake 8 to 10 minutes or until slight cracks appear and cookies are lightly golden. Remove from cookie sheets to cooling racks; cool 5 minutes. Place remaining 1 cup powdered sugar in shallow dish. Roll warm cookies in powdered sugar; cool. Store tightly covered up to 1 week.
