Linguine al Pesto (Linguine with Pesto Sauce and Potato) image

Provided by Food Network

Categories     main-dish

Yield Serves 6

Number Of Ingredients 13

1 pound fresh or dried linguine
1 boiling potato, peeled and cubed
1 cup pesto (see below)
3 tablespoons unsalted butter
1 cup grated Parmesan cheese, for serving
Freshly ground black pepper, for serving
2 cloves garlic
3/4 cups pine nuts
Salt
Leaves fromo 1 bunch basil, about 1/4 pound, well washed and dried
1/2 cup extra virgin olive oil
1 cup grated Parmesan cheese
1/2 cup grated hard pecorino cheese

Steps:

  • When cooking the pasta, add a potato to the salted water. This trick returns to the pasta the starch it tends to lose in draining, thus preventing the linguine from clumping. Drain the pasta cubes along with the pasta, reserving a little of the cooking water. Transfer the pasta and potato to a large bowl and dress them with the pesto and butter. If the pasta looks too dry, add a little of the reserved cooking water. Serve in individual dishes, topping each with grated Parmesan cheese and pepper.
  • If using a food processor, put the garlic, pine nuts, a pinch of salt, the basil, and the oil into the bowl and process it until the ingredients form a smooth paste. Add the Parmesan and the pecorino and pulse just to combine. Taste and adjust the salt.

Lynne's Linguine con Pesto di Pistacchi image

As comforting to make as it is to eat, this pesto pasta is one that The Splendid Table host and cookbook author Lynne Rossetto Kasper turned to often after her husband's death.

Provided by Raghavan Iyer

Categories     Pesto Pasta

Time 35m

Yield 6

Number Of Ingredients 11

1 cup shelled pistachio nuts
½ cup pine nuts
3 large unpeeled cloves garlic
1 cup firmly packed fresh basil leaves
½ cup extra-virgin olive oil
1 teaspoon coarse sea salt
½ teaspoon coarsely cracked black pepper
½ teaspoon crushed red pepper
1 pound dried linguine
1 pound cherry tomatoes, halved
½ cup shredded Parmigiano-Reggiano cheese

Steps:

  • Heat a large heavy-bottomed skillet over medium heat. Pile in pistachios and pine nuts. Cook, stirring frequently, until light brown and incredibly nutty-smelling, 3 to 5 minutes. Transfer to a food processor.
  • Add garlic to the skillet and cook, turning occasionally, until softened and browned in patches, about 5 minutes. Remove to a plate to cool.
  • Peel cooled garlic and add to the food processor, along with basil, and process. With the blade still running, drizzle oil in through the chute. Once incorporated, transfer to a large bowl. Stir in salt, black pepper, and red pepper.
  • Meanwhile, bring a large pot of lightly salted water to a boil. Cook linguine at a boil until tender yet firm to the bite, about 11 minutes. Reserve about 3/4 cup pasta water. Drain remaining water from pasta and give the colander a good shake or two.
  • Add pasta and tomatoes to pesto. Give it all a good mix and drizzle in enough of the reserved pasta water to get the nutty pesto to coat the pasta. Sprinkle with Parmigiano-Reggiano cheese.

LINGUINE WITH PARSLEY-PECAN PESTO SAUCE

Linguine with Parsley-Pecan Pesto Sauce image

Categories     Cheese     Herb     Nut     Pasta     Appetizer     Vegetarian     Quick & Easy     Dinner     Lunch     Parmesan     Summer     Gourmet     Pescatarian     Peanut Free     Soy Free     No Sugar Added     Kosher

Yield Makes 4 to 6 servings

Number Of Ingredients 6

1/2 cup pecans
2 cups packed fresh flat-leafed parsley leaves
3/4 cup freshly grated Parmesan (about 1 1/2 ounces)
2 tablespoons fresh lemon juice
1 cup extra-virgin olive oil
1 pound linguine

Steps:

  • Preheat oven to 350°F.
  • On a baking sheet toast pecans in one layer in middle of oven until fragrant and one shade darker, about 7 minutes. Cool pecans and in a blender purée with parsley, Parmesan, lemon juice, and oil. Parsley-pecan pesto may be made 1 day ahead and chilled, covered.
  • In a 6-quart kettle bring 5 quarts salted water to a boil for linguine. Cook pasta in boiling water until al dente and ladle out and reserve 1 1/2 cups pasta cooking water. Drain pasta in a colander and in kettle toss with pesto, 1 cup reserved pasta cooking water, and salt and pepper to taste, adding as much of remaining ‚ cup pasta cooking water as necessary for desired consistency.

Tips:

  • Use fresh basil: Fresh basil leaves provide the best flavor for pesto sauce. If you can't find fresh basil, you can use dried basil, but the flavor will be less intense.
  • Choose a good quality olive oil: The olive oil you use in your pesto sauce will make a big difference in the flavor. Use a high-quality extra virgin olive oil for the best results.
  • Don't over-process the pesto: Over-processing the pesto sauce can make it bitter. Pulse the ingredients in a food processor or blender until they are combined, but don't let it run for too long.
  • Season to taste: Taste the pesto sauce before serving and adjust the seasoning as needed. You may need to add more salt, pepper, or lemon juice to taste.
  • Use pesto sauce as a marinade: Pesto sauce can be used as a marinade for chicken, fish, or vegetables. Simply coat the food in the pesto sauce and let it marinate for at least 30 minutes before cooking.

Conclusion:

Linguine pasta with basil pesto sauce is a delicious and easy-to-make dish that is perfect for a quick and easy weeknight meal. The pesto sauce is made with fresh basil, olive oil, Parmesan cheese, pine nuts, and garlic, and it can be used as a marinade or as a sauce for pasta, chicken, or fish. With a few simple tips, you can make a delicious and flavorful pesto sauce that will elevate any dish.
