WARM LOBSTER ROLLS

Warm Lobster Rolls image

Provided by Ina Garten

Time 20m

Yield 6 servings

Number Of Ingredients 8

1 pound cooked lobster meat
5 tablespoons unsalted butter, divided
1/2 cup small-diced celery
Kosher salt and freshly ground black pepper
1/2 teaspoon minced fresh dill, plus extra for garnish
1/2 teaspoon minced fresh parsley
Juice of 1 lemon
6 top-sliced hot dog buns, such as Pepperidge Farm

Steps:

  • Cut the lobster meat in large (3/4-inch) dice. Heat 3 tablespoons of the butter in a medium (10-inch) saute pan over medium-high heat. Add the lobster, celery, 1 teaspoon salt, and 1/2 teaspoon pepper and cook, stirring occasionally, for 2 to 3 minutes, until just heated through. Off the heat, sprinkle the lobster with the dill, parsley, and half of the lemon juice. Stir well.
  • Meanwhile, heat the remaining 2 tablespoons of butter in a large (12-inch) saute pan, until the butter sizzles. Place the rolls in the pan on their sides (you are toasting the outsides, not the insides) and cook over medium-high heat for 2 minutes on each side, until nicely browned.
  • Place the rolls, cut side up, on a platter. Divide the lobster mixture among the 6 rolls and sprinkle with extra dill, salt, and the remaining lemon juice. Serve hot while the rolls are crisp on the outside and the lobster filling is hot.

Time 1h

Yield 6 servings

Number Of Ingredients 8

2 lemons, halved
Sea salt
3 1 1/4-to-1 1/2-pound live lobsters
1/3 cup mayonnaise
7 tablespoons unsalted butter, melted
6 top-split hot dog buns
1/4 cup roughly chopped celery leaves
1/4 teaspoon celery salt

Steps:

  • Fill a large steamer or pot with about 2 inches of water. Squeeze the juice of 1 lemon into the water, then add the lemon halves and 1 tablespoon sea salt to the pot. Bring to a boil over medium heat.
  • Place the lobsters in the steamer basket or directly in the pot; cover and steam until the shells turn bright red, 8 to 10 minutes. Remove from the pot with tongs and rinse under cold water to cool slightly.
  • Remove the meat from the lobster shells: Twist off the claws, then break off the tail. Pull off the flippers. Insert your thumb into the flipper end of the tail and force out the meat. Crack the claws with the flat side of a knife or a lobster cracker; remove the meat. Roughly chop the lobster meat. Transfer to a bowl and chill 15 minutes.
  • Meanwhile, whisk the mayonnaise, 4 tablespoons melted butter and the juice of the remaining lemon in a large bowl. Add the lobster meat and toss to coat. Season with salt.
  • Heat a grill pan or skillet over medium heat. Brush the outside of the hot dog buns with 2 tablespoons melted butter. Toast the buns until slightly golden, about 1 minute per side. Divide the lobster salad among the buns. Drizzle with the remaining 1 tablespoon melted butter and sprinkle with the celery leaves and celery salt.

MAINE COAST LOBSTER ROLLS

Maine Coast Lobster Rolls image

Here is the simplest of recipes, brought to The Times in 2001 by Jason Epstein in the low, dispiriting weeks that followed the attacks on the World Trade Center and the Pentagon. He was inspired, he wrote, by the food writer M.F.K. Fisher's account of a disastrous love affair, and quoted her in his article about cooking for friends at that time: "We returned to the life that had been so real, like fog or smoke, caught in the current of air. We were two ghosts [but] very live ghosts, and drank and ate and saw and felt and made love better than ever before, with an intensity that seemed to detach us utterly from life." Thus, of course, lobster rolls.

4 stalks crisp, cold celery
1 to 1 1/4 cups Hellmann's mayonnaise
6 hot dog rolls, top-sliced (not side-sliced)
Paprika (optional)
Capers (optional)
4 tablespoons butter, melted (optional)

Steps:

  • Cut the lobster into 1/2-inch pieces and place in a bowl. Chop the celery into medium-fine pieces and stir into lobster. Stir in just enough mayonnaise to coat the lobster mixture.
  • As is traditional in Maine lobster shacks, fry the rolls in a skillet or on a griddle in butter. Otherwise, toast them on both sides under a broiler. Add the lobster salad and sprinkle with paprika and a few capers.

LOBSTER ROLLS

Lobster Rolls image

I grew up in Nova Scotia where seafood was cheap. My Mom and grandmothers had some pretty inventive ways of making lobster 'not-boring!' Now, lobster is a treat and costs a fortune. I've paid over ten dollars for one of these lobster rolls in Cape Cod and it wasn't half as good or half as big as the ones my Mom taught me to make. This is a wonderful summer (or winter) treat and makes a fancy luncheon to impress your friends. (And no, I don't eat the green stuff in the lobster!)

MAINE LOBSTER ROLLS

Maine Lobster Rolls image

Very simple. I found these while on vacation in Maine and couldn't get enough of them. Lobster is cheap up there and we ate them every chance we had. In other parts of the country, lobster isn't that cheap, but if you like 'real lobster' and not the imitation stuff, this is a nice (and easy) treat. The cook time is approximate. It depends on how big the lobster is. Just cook it until it's red in color.

Provided by L. Duch

Categories     Lunch/Snacks

Time 15m

Yield 4 serving(s)

Number Of Ingredients 6

4 top sliced hot dog buns
2 tablespoons unsalted butter, softened
2 cups coarsely chopped lobsters (form about 3 1-1/4 lb lobsters, cool but not cold)
3 tablespoons mayonnaise, mixed with
2 tablespoons minced celery
salt and pepper

Steps:

  • spread softened butter on outsides of buns and heat on griddle or heavy skillet over mod/high heat until toasted.
  • Divide lobster meat among buns and put a dollop of mayonnaise mixture on top.
  • NOTE: Top slice hot dog buns are buns that have had the sides sliced off.
  • If you can't find these in the supper market then you can make your own using Texas toast and toasting one side.
  • I've only found those kind of buns in Maine when we were on vacation.

FOCACCIA LOBSTER ROLLS

Focaccia Lobster Rolls image

Provided by Giada De Laurentiis

Categories     main-dish

Time 10m

Yield 4 servings

Number Of Ingredients 12

1/4 cup fresh tarragon leaves
1/4 cup roughly chopped fresh chives
1 lemon, zested
1/4 cup lemon juice
1 clove garlic, minced
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 cup extra-virgin olive oil
1/2 cup mascarpone cheese
1/4 cup cream
1 pound cooked lobster tails (or prawns), cut into large cubes
4 pieces focaccia bread (about 4 by 5 inches each)

Steps:

  • Place the tarragon, chives, lemon zest, lemon juice, garlic, salt, and pepper in a blender and blend until the herbs are minced and the ingredients are combined. With the machine running, add the olive oil. Add the mascarpone cheese and cream and blend until mixed.
  • Transfer the lobster to a medium bowl. Add the herb sauce and stir to coat. Divide the lobster mixture among the sandwiches and serve immediately.

Tips:

  • Use fresh lobster meat. Fresh lobster meat has a sweeter, more delicate flavor than frozen lobster meat. If you can't find fresh lobster meat, frozen lobster meat is a good substitute.
  • Cook the lobster meat properly. Overcooked lobster meat is tough and chewy. To prevent this, cook the lobster meat just until it is opaque and firm.
  • Use high-quality mayonnaise. Mayonnaise is a key ingredient in lobster rolls, so it's important to use a high-quality mayonnaise that you enjoy the taste of.
  • Add some extras. Feel free to add other ingredients to your lobster rolls, such as chopped celery, red onion, or fresh herbs.
  • Serve the lobster rolls immediately. Lobster rolls are best served immediately after they are made. The bread will become soggy if you wait too long.

Conclusion:

Lobster rolls are a delicious and classic summer seafood dish. With a few simple ingredients and a little bit of time, you can make lobster rolls at home that are just as good as the ones you get at your favorite restaurant. So next time you're craving lobster, give this recipe a try!
