Time 50m

Number Of Ingredients 16

1 ½ pounds yellow potatoes, scrubbed and cut into 2-inch pieces
½ cup low-fat milk
2 tablespoons butter
¾ teaspoon salt, divided
½ teaspoon ground pepper, divided
1 tablespoon extra-virgin olive oil
1 pound lean ground beef
8 ounces cremini mushrooms, quartered
1 medium onion, diced
4 cloves garlic, minced
2 tablespoons all-purpose flour
16 ounces stout (see Tip)
1 cup low-sodium beef broth
1 tablespoon Worcestershire Sauce
1 cup frozen peas and carrots
Chopped fresh parsley for garnish

Steps:

  • Place potatoes in a large saucepan with enough water to cover by 1 inch. Bring to a boil. Adjust heat to maintain a lively simmer and cook until tender, about 30 minutes. Drain and return to the pan. Add milk, butter, ½ teaspoon salt and ¼ teaspoon pepper. Mash to desired consistency. Cover to keep warm.
  • Meanwhile, heat oil in a large skillet over medium-high heat. Add beef and cook, breaking into large chunks and flipping occasionally, until browned on all sides, about 6 minutes. Sprinkle with the remaining ¼ teaspoon pepper. Transfer to a clean plate.
  • Add mushrooms, onion and garlic to the pan and cook, stirring occasionally, until just starting to brown, 5 to 8 minutes. Sprinkle with flour and the remaining ¼ teaspoon salt and cook, stirring frequently, for 1 minute. Return the beef to the pan and stir in beer, broth and Worcestershire, scraping up any browned bits. Bring to a gentle simmer. Cover and cook until the beef and vegetables are very tender, about 20 minutes. Add peas and carrots, increase heat to medium and cook, stirring occasionally, until the stew is slightly thickened, about 5 minutes. Serve with the mashed potatoes, sprinkled with parsley, if desired.

Time 8h20m

Yield 8 serving(s)

Number Of Ingredients 14

1 leek, thinly sliced (white and pale green parts only)
3 garlic cloves, pressed
1 tablespoon dried tarragon
1/2 teaspoon lemon zest
1/2 teaspoon dried thyme
1/2 teaspoon white pepper
1/4 teaspoon dried sage
2 1/2-3 lbs veal, trimmed of fat, cubed
1/3 cup all-purpose flour
3/4 cup dry white wine
1/4 cup lemon juice
1 tablespoon cornstarch
1/4 cup whipping cream
salt

Steps:

  • In a 3 quart or larger slow cooker, combine leek, garlic, tarragon, lemon zest, thyme, white pepper and sage.
  • Coat veal cubes with flour, then add to slow cooker.
  • Pour in wine and lemon juice.
  • Cover and cook on low until veal is very tender when pierced (7-8 hours).
  • In a small bowl, mix cornstarch and cream. Blend into stew.
  • Increase cooker to high. Cover and cook, stirring 2 to 3 times, until sauce is thickened (about 15 minutes).
  • Season to taste with salt.
  • Garnish with fresh tarragon and lemon slices.

Tips:

  • Choose the right cut of veal. For stew, look for a cut that is tough and flavorful, such as chuck roast or shoulder. These cuts will become tender when braised in liquid.
  • Brown the veal before braising. This will help to develop flavor and color.
  • Use a variety of vegetables in your stew. This will add flavor and texture. Good choices include carrots, celery, onions, potatoes, and turnips.
  • Season the stew well. Use a combination of salt, pepper, garlic powder, and onion powder. You can also add herbs such as thyme, rosemary, and oregano.
  • Braise the stew for at least 2 hours. This will allow the meat to become tender and the flavors to meld.
  • Serve the stew with a side of crusty bread or mashed potatoes. This will help to soak up the delicious sauce.

Conclusion:

Low-carb veal stew is a hearty and flavorful dish that is perfect for a cold winter day. It is also a great way to use up leftover veal. With a few simple ingredients and a little time, you can create a delicious and satisfying meal that the whole family will enjoy.
