Steps:

  • In a bowl, beat egg substitute for 1 minute or until frothy and slightly thickened. Stir in milk and vanilla.   • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8 inch square pan.

Amazingly rich and chewy, you would never know these are low fat. I have people asking me for this recipe whenever I make it. The applesauce is the secret ingredient in these delicious brownies! One suggestion I have to make them fudgier is to use a very high quality cocoa. I usually use Watkins or Epicure Selections and found a big difference from that and the kind you can buy in the store. It makes them a real dark chocolate in the middle and they are rich and chewy! This recipe also doubles well and will fit into a 9x13 pan.

1/2 cup cocoa
1 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons butter
1 teaspoon vanilla

2 tablespoons pumpkin puree or 2 tablespoons pumpkin pie filling
3/4 cup applesauce

Steps:

  • Preheat oven to 350°F.
  • In a medium bowl sift together flour, cocoa powder, baking powder, and salt.
  • Microwave the margarine* in a small bowl until melted. Let cool .
  • Mix margarine and sugar in a large bowl.

1 (15 ounce) can organic black beans or 1 (15 ounce) can pinto beans
3 large eggs (or 2 jumbo eggs)
1/4 cup almond milk
2 -3 teaspoons vanilla extract
3 drops liquid stevia (to taste)
1 tablespoon agave nectar (to taste)
2 -3 tablespoons unsweetened cocoa powder (I usually use 2 T., can also sub carob powder)
1 teaspoon baking powder
1/4 teaspoon ground cinnamon or 1/4 teaspoon cardamom

Steps:

  • Preheat oven to 350 degrees F.
  • Pour beans into a colander and rinse very, very, very well.
  • Place drained beans in the large cup of the NutriBullet (or use a blender or food processor).

  • Whiz in NutriBullet, blender, etc. until beans are pureed and mixture is smoothly blended.
  • Pour into a mixing bowl.

  • Immediately place the pan in the freezer to cool quickly (about 10-15 minutes - do not try this with a glass baking pan - only metal is safe for this). Alternatively you can just let them cool in the pan on a rack, but this will take much longer.
  • Cut into squares. Can refrigerate remaining brownies by covering them with plastic wrap.

1 c walnuts, chopped [optional]
1/3 c sugar or splenda
1 8 oz. pkg. low-fat cream cheese
1 egg
2 Tbsp all purpose flour

1 c milk chocolate chips

  • 1. Preheat oven to 350 degrees. Spray a 9x13 baking pan lightly w/cooking spray.
  • 2. Prepare the brownie mix as directed on the package. Adding the walnuts [optional]. Pour into the baking pan. [do not bake yet]
  • 3. In a medium bowl, cream the softened cream cheese and sugar until well blended. Add the egg, flour, baking powder and vanilla; mix until smooth.
  • 4. Pour the cream cheese mixture over the brownie mix; cut through with a knife For a marbled effect.

  • 6. Bake for 35-45 minutes until lightly browned.
  • 7. Cool; cut into squares. [After cooling, for a neater presentable cut bar; I trim about 1/2 inch all around the pan. Remove it and use it to snack on OR can be crumbled on top of ice cream [either way kids love this]
