Adapted from Bobby Flay, but the fat is cut by almost 80%! It doesn't make much, but the flavor is strong, and enhances a salad very well.

2 tablespoons seasoned rice vinegar
1/2 tablespoon peanut butter (not chunky)
1/2 tablespoon soy sauce
1/2 tablespoon honey
1 teaspoon sesame oil
1 teaspoon hot red chili pepper flakes (I used Mexican variety)
1/2 tablespoon fresh ginger, grated

Steps:

  • Combine all ingredients in a small bowl, and whisk well.
  • Add to your favorite salad.

3 cups salted peanuts
1/2 cup sugar
1/3 cup packed brown sugar
2 tablespoons hot water
2 tablespoons butter, melted
1 tablespoon Sriracha chili sauce or hot pepper sauce
1 teaspoon chili powder

Steps:

  • Place peanuts in a greased 1-1/2-qt. slow cooker. In a small bowl, combine the sugars, water, butter, chili sauce and chili powder. Pour over peanuts. Cover and cook on high for 1-1/2 hours, stirring once., Spread on waxed paper to cool. Store in an airtight container.

I created this recipe as an answer to the high fat peanut sauces in restaurants and in most recipes. It is a touch sweeter than most, but I find the soy sauce and the cayenne dampens the sweetness considerably.

1/2 cup better n' Peanut butter low-fat peanut butter
1/2 cup hot water
1 tablespoon cornstarch
3 tablespoons soy sauce
1 tablespoon pureed ginger
1 tablespoon crushed garlic
5 scallions, sliced
5 sprigs fresh basil, chopped
1/2 teaspoon cayenne

Steps:

  • Mix peanut butter with hot water in a small bowl until smooth.
  • Add spices, soy sauce and cornstarch and whisk to remove any lumps.
  • Steam-fry veggies of choice, and add the peanut sauce when stirfry is half done.
  • Bring to a boil, then reduce to a simmer until veggies are done and the sauce thickens.
  • Serve!
