Time 10m

Yield 4 sides, 4 serving(s)

LOW-FAT/LITE ALFREDO SAUCE

Low-Fat/Lite Alfredo Sauce image

I originally saw this recipe on another website, but I added a few ingredients. This is the best low fat, low cal. Alfredo sauce I have ever tried.

Provided by Tiffany I.

Categories     Sauces

Time 25m

Yield 4 serving(s)

Number Of Ingredients 8

1 cup skim milk
1/2 cup low fat cottage cheese
1 tablespoon cornstarch
1/4 teaspoon salt
1/8 teaspoon pepper
1/4 teaspoon garlic powder
1/2 cup grated parmesan cheese or 1/2 cup romano cheese
1/8 teaspoon basil (can add more, depending on your pref.)

Steps:

  • Put all ingredients, except basil, into food processor or blender and blend until smooth.
  • Pour mixture in small saucepan and add basil.
  • Cook over medium-low heat until heated through and smooth consistency.
  • Add more basil, salt and/or pepper, if desired.
  • Let cook on very low heat for 10 minutes, stirring occasionally.
  • Serve over any type of pasta or use for vegetable lasagna.

Tips:

  • To make a creamy sauce without the heavy cream, use a combination of milk and cornstarch. The cornstarch will help to thicken the sauce and give it a smooth, creamy texture.
  • If you don't have cornstarch on hand, you can use all-purpose flour. However, you will need to use twice as much flour as cornstarch to achieve the same thickening effect.
  • To add a cheesy flavor to the sauce, use a combination of Parmesan cheese and Romano cheese. You can also add a pinch of garlic powder and onion powder for extra flavor.
  • If you are using frozen shrimp, be sure to thaw them completely before adding them to the sauce. Otherwise, the shrimp will not cook evenly.
  • Serve the sauce over your favorite pasta, such as spaghetti, fettuccine, or penne.

Conclusion:

This low-fat Alfredo sauce is a delicious and healthy alternative to the traditional Alfredo sauce. It is made with simple ingredients that you probably already have on hand, and it can be ready in just a few minutes. So next time you are craving a creamy and cheesy pasta dish, try this low-fat Alfredo sauce recipe.
