LUSCIOUS COCONUT LEMON SQUARES
Steps:
- Preheat oven to 350. Combine coconut, 1 cup flour, 2 Tbl. sugar and the salt. Cut in butter until mixture is crumbly. Gather particles with lightly floured fingertips, and press evenly and firmly over bottom and 3/4 in up sides of a 9x9x2 inch baking pan. Bake in preheated oven until golden, about 20 minutes. Meanwhile, in a small bowl beat together eggs, 3/4 cup sugar, 2 Tbl. flour and the lemon juice. Pour over crust and continue to bake until set, about another 20 min. Cool in pan on rack. Cut into 16 squares and sprinkle with confectioners' sugar.
Tips:
- Choose the right lemons: Meyer lemons are recommended for their sweeter and less tart flavor, but regular lemons can also be used. If using regular lemons, reduce the amount of lemon juice to 1/2 cup.
- Grate the lemon zest finely: This will help to release the lemon's flavor and aroma.
- Use unsweetened coconut milk: This will help to keep the lemon squares from becoming too sweet.
- Don't overmix the batter: Overmixing can result in tough lemon squares.
- Bake the lemon squares until the edges are golden brown and a toothpick inserted into the center comes out clean: This will ensure that the lemon squares are cooked through.
- Allow the lemon squares to cool completely before cutting and serving: This will help to prevent them from falling apart.
Conclusion:
Luscious coconut lemon squares are a delicious and refreshing treat that are perfect for any occasion. They are easy to make and can be enjoyed by people of all ages. With their creamy coconut filling, zesty lemon flavor, and buttery shortbread crust, these lemon squares are sure to be a hit at your next party or gathering.
