MAGIC COOKIE BARS (HELLO DOLLIES) RECIPE - (4.4/5)

Magic Cookie Bars (Hello Dollies) Recipe - (4.4/5) image

Provided by Foodiewife

Number Of Ingredients 7

1/2 cup butter, melted, 1 stick
1 1/2 cups graham cracker crumbs
1 (14-ounce) can Sweetened Condensed Milk
2 cups semisweet chocolate morsels
1 1/3 cups flaked coconut
1 cup chopped nuts (I used walnuts)
NOTE: You can use butterscotch morsels for a different twist

Steps:

  • Heat oven to 350°F (325°F for glass dish). Coat 13x9-inch baking pan with no-stick cooking spray, or make a parchment paper "sling"* . Combine graham cracker crumbs and butter. Press into bottom of prepared pan. Pour sweetened condensed milk evenly over crumb mixture. NOTE: An offset spatula makes this easy to do. Layer evenly with chocolate chips, coconut and nuts. Press down firmly with a fork (I use the palm of my hand). Bake 25 minutes or until lightly browned. Cool.* Cut into bars or diamonds. Store covered at room temperature. I like to make a "sling" by layering two pieces of parchment paper, which has been lightly sprayed. This helps the parchment paper to "stick" to the pan. I also leave a couple of inches of overhang. That way, it's easy to lift the baked cookie out of the pan to cool on a rack. That way I can easily cut the bars with a long knife or a bench scraper.

MAGIC COOKIE BARS

These bars are known by several names (Seven Layer, Magic Cookie, Hello Dolly, Chocolate Coconut) but the originator of this bar (msmeanie) claims they're wholesome compared to the others. Unfortunately, the calories are still about the same but they're so rich that a small piece will satisfy your sweet tooth. The posted yield is approximate....it all depends on the size you cut them into.

MAGIC COOKIE BARS

Magic Cookie Bars image

Coconut dream bars. Magic cookie bars. Hello Dolly bars. You've seen these classic treats at bake sales, holiday parties and potlucks over the years. But they tend to crumble when cut, thanks to a thin graham cracker crust. And, topped with gobs of super-sweet shredded coconut, sweetened condensed milk and semisweet chocolate, they have a cloying bite that may be too much for even the sweetest tooth. This version starts with a thicker graham cracker cookie base. It's baked with an egg, a bit of brown sugar and some leavener, which makes it pleasantly dense and chewy and means that it cuts nicely and stands up well to the decadent toppings. Next, unsweetened flaked coconut and dark chocolate are layered with plenty of chopped pecans and condensed milk. The slightly bitter chocolate and toasty coconut tame the sweetness of the condensed milk, which caramelizes as it cooks, making the whole package well-balanced and full of flavor.

Time 1h

Yield 15 bars

Number Of Ingredients 10

6 tablespoons/85 grams unsalted butter, melted and cooled slightly, more for greasing the pan
20 graham crackers (about 310 grams)
1/4 cup/50 grams packed light or dark brown sugar
1 1/2 teaspoons baking powder
1/2 teaspoon kosher salt
1 large egg
1 14-ounce/397 gram can sweetened condensed milk
8 ounces/227 grams chopped bittersweet chocolate (1 1/2 cups)
1 cup/110 grams chopped pecans
2 cups/114 grams unsweetened flaked coconut

Steps:

  • Heat oven to 350 degrees. Butter a 13- by 9-inch baking pan. Line it with parchment, leaving a 2-inch overhang on two sides.
  • In a food processor, process the graham crackers until finely ground. (You should have about 2 3/4 cups.) Add brown sugar, baking powder and salt and pulse to combine. While machine is running, add butter and egg and process until the crumbs are completely moistened and large clumps have formed.
  • Tip the graham cracker mixture out into the prepared pan. Crumble the mixture to divide it evenly across the bottom of the pan, then use your fingers to spread it out into an even layer, lightly pressing it into the pan. Bake the crust until it is set and dry, about 15 minutes.
  • Pour the sweetened condensed milk evenly over the crust and spread it out into an even layer. Sprinkle half the chocolate and half the pecans evenly over the surface. Sprinkle the coconut on in an even layer. Then sprinkle the remaining chocolate and nuts evenly over the top.
  • Bake until toppings are evenly golden brown, about 25 to 30 minutes. Let cool in the pan on a wire rack. To serve, lift the bar out of the pan using the parchment overhang, transfer it to a cutting board and cut into 15 bars.

Tips:

  • Use high-quality chocolate chips. This will make a big difference in the flavor of your cookies. If you can, use a variety of chocolate chips, such as semisweet, milk chocolate, and dark chocolate.
  • Don't overmix the dough. Overmixing will make the cookies tough. Mix just until the ingredients are combined.
  • Chill the dough before baking. This will help the cookies hold their shape and prevent them from spreading too much.
  • Bake the cookies until they are just set. Overbaking will make the cookies dry and crumbly.
  • Let the cookies cool completely before cutting them. This will help prevent them from falling apart.
