MAMEY MILKSHAKE
"Batido." This pretty little word is well known all over Latin America and to many in South Florida as well. A sweet and frothy fruit milkshake, it's as varied as the currently available fruits in season. Guanabana, mamey, atemoya, coconut, cherimoya, banana, tamarind and many others-all contributing their gorgeous colors and enticing fragrances! Put the pulp of any tropical fruit or fruits in an electric blender with a little ice, a splash of milk and hit the blend button. Moments later, in a frosty glass, a delicious, healthy, delectable fruit smoothy is waiting for you. The buttermilk is my own addition. If you like the tangyness of sour cream ice cream or crème fraîche you will like this as well. If not, you can omit the buttermilk and go the standard batido route. It's all good.

Steps:
- Toast 6 marshmallows over a gas flame or in a broiler for about 30 seconds on each side. Thread the remaining 3 marshmallows on a skewer.
- Blend chocolate ice cream and milk until smooth and just pourable. Add toasted marshmallows and pulse to combine. Spread some hot fudge sauce on the sides of a tall glass. Add 1 scoop vanilla ice cream. Crumble in the graham cracker. Top with some hot fudge. Top with milkshake; do not fill to the top of the glass or it will overflow when toppings are added. Pipe on whipped cream, as desired.
- Dip a few pieces of graham cracker in hot fudge and arrange in the whipped cream. Toast the skewered marshmallows, then arrange the skewer in the milkshake. Serve with a straw, bowl, and spoon.
MACA MALT MILKSHAKE

- To make this recipe, you can use either boxed organic coconut milk or make it fresh yourself. To make fresh coconut milk, blend the water and meat from 4 young Thai coconuts in a high-speed blender for 30 seconds. Add the dates, ice, almond butter, maca powder, vanilla powder, cistanche herb, mesquite powder, cinnamon, cloves, and sea salt. Blend at high speed for another 30 seconds. Garnish with the cinnamon stick.
