I sometimes make it somewhat "healthier" by using sugar free and low fat options. Normally I try not to make it with instant pudding but it still tastes great if made with instant pudding. Preparation time includes cooling.

3 ounces vanilla pudding mix
2 cups boiling water
1 (12 ounce) container whipped cream, thawed

1 can (15 ounces) mandarin oranges
2 packages (.3 ounce each) sugar-free cranberry gelatin
1-1/2 cups boiling water
1 can (14 ounces) whole-berry cranberry sauce
1-1/2 cups crushed salt-free pretzels
6 tablespoons butter, melted
Sugar substitute equivalent to 5 tablespoons sugar, divided
1 package (8 ounces) fat-free cream cheese
1 carton (8 ounces) frozen reduced-fat whipped topping, thawed

Steps:

  • Drain oranges, reserving juice in a 2-cup measuring cup; set oranges and juice aside. , In a large bowl, dissolve gelatin in boiling water. Stir in cranberry sauce until melted. 2 cups pretzels sticks (broken into fourths)
1/2 cup butter (melted)
3 Tablespoons sugar
1 (8 ounce) package cream cheese
1 (8 ounce) package Cool-Whip (non-dairy whipped topping)
1 cup sugar
1 (6 ounce) box orange Jell-o
2 cups boiling water
4 (11 ounce) cans mandarin oranges (drained)

Steps:

  • Pre-heat oven to 350 degrees.
  • For the first layer, combine broken pretzels, melted butter and sugar. Stir together until well blended. Press in 9 x 13 inch baking pan and bake at 350 degrees for 7 minutes. Cool completely.
