GOAT CHEESE LOG WITH MANGO CHUTNEY AND CILANTRO

Goat Cheese Log With Mango Chutney and Cilantro image

From O-Magazine. Serve with crackers. I like the goat cheese and mango chutney I get at Trader Joes. Not too sweet and it has just a tiny little kick to it (from the ginger). Wheat thins are especially nice with this.

GOAT CHEESE AND MANGO QUESADILLAS

Goat Cheese and Mango Quesadillas image

Tangy goat cheese and tropical mango make a distinctive pairing inside this easy-to-make lunch that uses wholesome whole-wheat tortillas.

Provided by Martha Stewart

Categories     Food & Cooking     Lunch Recipes

Number Of Ingredients 6

4 ounces fresh goat cheese, room temperature
6 whole wheat tortillas (6-inch)
1 large ripe mango, peeled, pitted, and thinly sliced
1/2 small red onion, thinly sliced
1 jalapeno, thinly sliced
1/3 cup fresh cilantro leaves

Steps:

  • Spread goat cheese on tortillas. Divide mango, onion, jalapeno, and cilantro on one half of each tortilla. Fold tortilla over filling.
  • Heat a large heavy skillet over medium-high. Working in batches, cook quesadillas until cheese softens and tortillas are crisp and browned in spots, 1 to 2 minutes per side (if skillet begins to scorch, reduce heat to medium). Transfer quesadillas to a cutting board and cut each into 4 wedges. Serve immediately.

Tips:

  • Choose ripe mangoes: Look for mangoes that are slightly soft to the touch and have a sweet, fragrant smell. Avoid mangoes that are too firm or have green skin.
  • Use fresh goat cheese: Fresh goat cheese has a mild, tangy flavor that pairs well with the sweetness of mangoes. Avoid using pre-packaged or processed goat cheese, as it may have a stronger flavor that can overpower the other ingredients.
  • Toast the walnuts: Toasting the walnuts enhances their flavor and adds a nice crunchy texture to the salad. Be sure to watch the walnuts closely while toasting, as they can burn easily.
  • Use a light dressing: A light dressing, such as a vinaigrette or a simple olive oil and lemon juice dressing, will allow the flavors of the mangoes, goat cheese, and walnuts to shine through.
  • Serve immediately: This salad is best served immediately after it is made, as the mangoes and goat cheese can become watery if they sit for too long.

Conclusion:

Mango and goat cheese salad is a refreshing, flavorful salad that is perfect for a summer lunch or dinner. The sweetness of the mangoes pairs perfectly with the tanginess of the goat cheese, and the toasted walnuts add a nice crunchy texture. This salad is also very easy to make, and it can be prepared in just a few minutes. If you are looking for a healthy and delicious salad that is sure to impress your guests, then give this mango and goat cheese salad a try.
