1 ripe mango, peeled, pitted, and chopped (1 cup)
1/2 cup passion-fruit juice, such as Ceres
1/4 cup simple syrup
1/4 cup fresh lime juice
1/2 cup dark rum, preferably Sparrow's
1/2 cup white rum, preferably SLR
2 cups ice
Passion-fruit seeds, for serving (optional)
Grenadine Sea Salt Bequia Blend coconut sea salt (optional, see cook's note), for serving

Steps:

  • In each of 4 sturdy glasses, muddle 5 mint leaves until they start to break down, a few seconds. In a blender, purée mango, passion-fruit juice, simple syrup, lime juice, and 1/2 cup water. Stir in both rums.

This recipe was a total accident. Never thought when I asked for light rum that I would be given mango-flavored rum, but it turned out wonderfully. Nice and tropical, yet has that cool, minty flavor.

10 fresh mint leaves
1 lime, cut into 4 wedges
2 tablespoons white sugar
3 fluid ounces lemon-lime soda (such as Sprite®)
3 fluid ounces club soda
2 ½ fluid ounces mango-flavored rum
3 cubes ice, or to taste

Steps:

  • Place mint leaves in a large drinking glass. Add 1 lime wedge; crush together with a muddler to extract juices. Add 1 more lime wedge and sugar; mix with the muddler until sugar is dissolved. Remove lime peels from the glass.

1 bunch fresh spearmint, stems removed
2 limes, sliced, plus 1 1/2 cups fresh lime juice
1 1/2 cups mango-infused rum
4 cups club soda
