½ cup chopped onion

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Lightly grease a 12 cup muffin pan.

2 cups water
2 cups diced sweet potatoes
5 ounces bacon, cooked and chopped
1 tablespoon chopped fresh thyme, or 1 teaspoon dried
1/2 teaspoon garlic powder
Sea salt or pink Himalayan sea salt to taste
Black pepper to taste (if tolerated)
4 tablespoons maple syrup
2 pounds ground beef or bison

Steps:

  • Preheat the oven to 350°F.
  • Place the water and a steamer basket in a medium-size cooking pot over high heat. Bring the water to a boil.
  • Place sweet potatoes in the basket, cover, and steam for 10 to 12 minutes, or until the potatoes easily break apart with a fork. Drain remaining water. Let potatoes cool.
  • In a food processor, place the cooked sweet potatoes, bacon, thyme, garlic powder, salt, pepper, and maple syrup. Process into a thick paste.
  • Place the meat in a large bowl, add the sweet potato mixture, and combine well.
  • Gently spoon 1/3 cup of the meatloaf mixture into each of 12 muffin cups.

2 teaspoons honey
1 tablespoon white vinegar
1 tablespoon Club House® Taco Seasoning

¼ cup yellow onion, minced
1 clove garlic, minced
2 lb lean ground beef
¼ cup bread crumbs
1 packet Club House® Taco Seasoning
2 large eggs, beaten

12 small flour tortillas

Steps:

  • Make the taco sauce: In a medium bowl, whisk together the tomato sauce, honey, vinegar, and Club House® Taco Seasoning until smooth. Set aside.
  • Make the meatloaf muffins: Preheat the oven to 180°C (350°F).

1 1/4 cups finely chopped onions
1 cup breadcrumbs
2/3 cup ketchup
1 dash hot sauce
1 dash Worcestershire sauce

3 large eggs, lightly beaten
1/2 teaspoon thyme
1 teaspoon salt

1 cup finely chopped onion
3 cloves garlic, peeled and chopped

1/4 cup sour cream or plain yogurt
2 large eggs

3/4 teaspoon dried thyme
1 teaspoon Worcestershire sauce
1/2 teaspoon freshly ground pepper
