MAPLE SYRUP PIE

Maple Syrup Pie image

Tarte au Sirop d' Érable "My husband and I had an absolutely fantastic dessert at Restaurant Aux Anciens Canadiens while on vacation in Quebec, Canada," Says Deb Kalikow of Natick, Massachusetts. "Maple syrup pie served with crème fraîche is its specialty. The pie capped off a perfect dinner of delicious French-Canadian dishes. We ate at another restaurant the next night and tried the maple syrup pie there. We were so disappointed by our first bites that we then went back to Aux Anciens Canadiens and waited an hour just to have another piece of their pie." Don't be tempted to forgo the cream with this pie; it perfectly complements the dessert's rich silkiness and balances the sweetness.

MAPLE SYRUP SUGAR PIE

Maple Syrup Sugar Pie image

My husband's coworker was looking for someone to bake him a perfect sugar pie, which I'm told is served as a traditional dessert in Quebec, Canada. Of course, I took up the challenge when he asked and was able to come up with this recipe. He states that he's never seen his mom take two helpings of dessert and that its taste and texture is perfect. The pie crust is my mom's recipe. This is a very sweet pie and I have found that a good quality maple syrup is essential. You can also add raisins or currants for a little bit of a switch-up!

MAPLE SYRUP PIE

Maple Syrup Pie image

Maple syrup pie is completely traditional and homey Québécois fare. Achingly sweet? Not at all. The heavy cream moderates the sweetness of the maple syrup. The cornstarch thickens the mixture. That's it. A novice could obtain a baked pie shell and be done with the dish in less than a quarter-hour.

MAPLE SYRUP PECAN PIE

Maple Syrup Pecan Pie image

Serving Ideas : Warm briefly just before serving Adapted from: Elinor Klivans' Bake and Freeze Desserts. Make this with half of Recipe #452912

Provided by StevenHB

Categories     Pie

Time 1h5m

Yield 8 serving(s)

Number Of Ingredients 8

1/2 vodka pie crust, Vodka Pie Crust
3 eggs
1 cup light brown sugar, packed
1 cup pure maple syrup
4 tablespoons unsalted butter, melted
1/4 teaspoon salt
1 teaspoon vanilla extract
2 cups pecans, coarsely chopped

Steps:

  • Maple syrup: Preferred grades are C, B, and A, in that order.
  • Lightly grease a ten-inch pie pan and put the pie crust in it.
  • Set the oven at 400°F to preheat.
  • Position a rack to the middle.
  • In a bowl, beat the eggs until they are combined.
  • Add the sugar and mix well.
  • Stir in the maple syrup, butter, salt, vanilla, and pecans.
  • I'll frequently microwave the filling at this point just until it's warm, especially because my maple syrup and eggs are almost always refrigerator-cold. Stir frequently and don't overheat or the filling will start to set. Warming will allow the filling to set in the oven before the crust gets overcooked.
  • Pour the filling into the pie crust and transfer to the oven.
  • Bake the pie for 10 minutes.
  • Reduce the temperature to 350°F and bake for an additional 30-35 minutes or until the filling is set.
  • Give the pie a gentle shake; the center should remain firm (note that another 'zaar member had a problem with the pie being runny - you must bake until the center remains firm when the pie is shaken even if it takes more than 35 minutes).
  • Let the pie sit at room temperature to cool completely.
  • To make in advance, wrap the cooled pie in plastic wrap, then in heavy-duty aluminum foil (I've never actually done this).
  • Gently press the foil against the pie.
  • Freeze for up to two months.
  • Defrost the wrapped pie at room temperature.
  • Uncover the pie and warm in a 300°F oven for ten minutes before serving.

Time 25m

Number Of Ingredients 10

1 c maple syrup
1 c milk
2 Tbsp butter
2 medium egg yolks
1 Tbsp water
2 Tbsp cornstarch
1/8 tsp salt
1 tsp vanilla extract
1 a baked pie shell ! frozen or your own recipe
2 egg whites, for the meringue...... directions and amounts below.

Steps:

  • 1. BAKE PIE SHELL and set aside. FOR PIE: In a saucepan place the maple syrup, milk, and butter. Heat over low heat, stirring often, but do not boil.
  • 2. Beat together the egg yolks and water, then add the remaining ingredients. Mix thoroughly. Add to the hot syrup and cook until just thickened, stirring most of the time.
  • 3. Pour while hot into the baked pie shell. ***EGG WHITE DIRECTIONS: Beat the remaining 2 egg whites until stiff, gradually adding 4 tablespoons sugar, 1/8 teaspoon cream of tarter, and a pinch of salt. Then beat for 5 minutes, or till peaks stand up.
  • 4. Pre-heat oven to 325F. Spread the meringue on to the hot pie filling. Cook to a gentle brown in a pre-heated 325F oven, for about 5-10 minutes. Keep checking pie...not to brown!
  • 5. Cool pie on a wire rack. Serve cold, but not refrigerated! Serves 6. And enjoy a wonderful Canadian Maple Pie!

Tips:

  • Use fresh maple syrup. Fresh maple syrup has a more robust flavor and aroma than store-bought syrup. If you can, try to find locally produced maple syrup.
  • Don't overcook the filling. The filling should be thick and syrupy, but not too thick. If you overcook it, the filling will become grainy and lose its flavor.
  • Let the pie cool completely before serving. This will allow the filling to set and the flavors to develop.
  • Serve the pie with whipped cream or ice cream. This will add a delicious finishing touch to the pie.

Conclusion:

Maple syrup pie is a classic dessert that is loved by people of all ages. It is easy to make and can be enjoyed year-round. With its rich, sweet flavor and flaky crust, maple syrup pie is sure to be a hit at your next gathering.
