1/4 cup white wine vinegar

3 cups cauliflower florets
2 cups cherry tomatoes
1 cup halved bottled cherry peppers
3 medium cut into bite-size pieces zucchini
3 peeled and cut into bite-size pieces carrots
1 small thinly sliced onion

Steps:

  • In a small bowl, whisk together the olive oil, vinegar, Italian seasoning, Dijon mustard, garlic, salt, sugar and pepper. In a large bowl, combine the cauliflower, cherry tomatoes, cherry pepper halves, zucchini, carrots and onion.

3/4 cup vegetable oil
1/2 cup red wine vinegar
2 -3 green onions, chopped
