1 pkg. (3 oz.) JELL-O Gelatin, any flavor
1/2 cup warm water
1-1/2 cups JET-PUFFED Miniature Marshmallows

Steps:

  • Stir gelatin mix and water in medium microwaveable bowl. Microwave on HIGH 1-1/2 min.; stir until gelatin is completely dissolved.
  • Stir in marshmallows. Microwave on HIGH 1 min. or until marshmallows are partially melted. Stir with whisk until marshmallows are completely melted. Pour into 8-inch square pan sprayed with cooking spray.
  • Refrigerate 45 min. or until set. Run sharp knife around edges of pan to loosen gelatin layer from pan. Starting at 1 edge, roll up gelatin layer tightly. Cut into 1/2-inch slices. Refrigerate, covered, until ready to serve.

1/4 cup butter, melted
10 1/2 ounces mini marshmallows
5 1/2 cups Rice Krispies
1 1/2 cups milk chocolate chips
1/2 cup peanut butter

Steps:

  • Melt butter in a 6 quart kettle,add marshmallows. Melt completely over low heat. Add the Rice Krispies. Mix well. Spread evenly into a greased 10½ x 15½ baking sheet. In a microwave safe bowl combine chocolate chips and peanut butter. Melt at 1 minute intervals until completely melted, stirring after each minute. Spread on top of Rice Krispies mixture. Let set in a cool place till chocolate mixture sets up. Be careful not to let the chocolate get too hard, it will not make a neat roll if you do. Loosen all around with a metal spatula. Roll, starting on the long side. Sprinkle the roll with seasonal sprinkles if desired. Slice and enjoy! Can be wrapped in Saran Wrap for storage if needed.

  • In a medium bowl, mix the cream cheese, sour cream, fiesta-style ranch dressing mix, chunky salsa and Cheddar cheese. Spread even amounts of the mixture onto the tortillas. Roll tortillas and chill in the refrigerator until ready to serve.

4 ounces unsweetened chocolate
1 tablespoon butter
1 cup icing sugar
1 egg
3 cups mini marshmallows or 3 cups marshmallows, cut in small pieces
3/4 cup finely chopped walnuts
2 cups shredded coconut

Steps:

  • Melt chocolate with butter in the microwave.
  • Add in icing sugar and egg; cool slightly.
  • Mix in marshmallows into chocolate/butter mixture until they are coated with chocolate mixture.
  • Tear 3 sheets of foil paper about 12x18 inches each.
  • Sprinkle a 2-in band of coconut down the lengh of the foil.
  • Spoon 1/3 of the marshmallow mixture over the coconut.
  • Sprinkle the remaining coconut over marshmallow mixture.
  • Wrap up in the foil to make a long roll, sealing well.
  • Make 2 more rolls; wrap and freeze until firm.
  • (will keep for 2 months in the freezer).
  • When ready to use, remove from freezer, and slice frozen, 1/2-in thick.
  • If desired, place sliced pieces in coloured cupcake papers to serve.
  • Store in freezer.

Steps:

  • Lightly spray an 8 or 9 inch pan square pan with non-stick cooking spray and make sure it is spread well. Bring water to a boil in microwave- about 1 minute. Add Jello and stir well. Return to microwave for 1 minute and stir well. (This step ensures that Jello is completely dissolved.)
  • Add marshmallows and return to microwave for 45 seconds to 1 minute or until marshmallows are puffed and slightly melted. Whisk until marshmallows are completely dissolved. Creamy layer will float to the top.
  • Pour into prepared pan. Refrigerate for 45 minutes or until well set. They should be firm and easy to handle.
