MASHED POTATOES WITH HAM

Mashed Potatoes with Ham image

"Mashed Potatoes with Ham evolved from scalloped potatoes, which are tasty but time-consuming to bake. "I warmed up leftover mashed potatoes, then decided to throw in some ham to save a dish," Kathy explains. "The next time I made it, I added a cheese and crumb topping to give this casserole an appealing golden look."

Kosher salt and freshly ground black pepper
2 tablespoons vegetable oil
2 tablespoons butter
3 ounces thinly sliced country ham, diced (see Cook's Note)
1 medium onion, diced
1 red bell pepper, diced

Categories     Lunch/Snacks

Time 22m

Yield 1 serving(s)

Number Of Ingredients 3

leftover mashed potatoes
spicy tomato sauce (optional) or ketchup (optional)
mayonnaise (optional)

Steps:

  • Heat a heavy, thick frying pan until a droplet of water evaporates immediately if you flick it inches (DO NOT put any oil or fat of any sort in the pan, the potatoes WILL stick if you do).
  • Tip in your mashed potatoes and spread out to cover the pan base.
  • Cook on a medium heat and turn and shake occasionally.
  • Turn over in parts (it isn't like an omelette, don't worry if it breaks).
  • Keep frying until you have a solid crispy shell around it and a nice creamy center.
  • Enjoy with a spicy tomato sauce or ketchup and mayonnaise.

Tips:

  • Choose the right potatoes. Russet potatoes are the most common type of potato used for mashed potatoes, but you can also use Yukon Gold or red potatoes. Russet potatoes have a high starch content, which makes them fluffy and light when mashed. Yukon Gold and red potatoes have a lower starch content, so they will be less fluffy but more creamy.
  • Peel and cut the potatoes evenly. This will help them cook evenly.
  • Boil the potatoes in salted water. The salt will help to flavor the potatoes and prevent them from becoming bland.
  • Drain the potatoes thoroughly. This will help to prevent them from becoming watery.
  • Mash the potatoes until they are smooth and creamy. You can use a potato masher, a ricer, or a food processor to do this.
  • Add milk, butter, and seasonings to taste. The amount of milk and butter you add will depend on how creamy you want the mashed potatoes to be. You can also add garlic, herbs, or cheese to flavor the mashed potatoes.
  • Serve the mashed potatoes immediately. They are best when they are hot and fluffy.

Conclusion:

Mashed potatoes are a classic side dish that can be served with a variety of meals. They are easy to make and can be tailored to your own taste. Whether you like them fluffy and light or creamy and rich, there is a mashed potato recipe out there for you. So next time you are looking for a delicious and versatile side dish, give mashed potatoes a try.
