Steps:
- Preheat oven to 350 degrees.
- In a large mixing bowl, combine meat, bread crumbs, onion, ketchup, eggs, and onion soup mix.
- Use your hands to squish all of the ingredients together until all of the ingredients are well combined.
- Form the meat mixture into two "loaves." At this point, I usually wrap one of the loaves in press and seal freezer wrap and toss it in the freezer. However, if you have a larger family, you'll probably want to cook both.
- Put the two loaves in a 13x9 baking pan and bake for 45 minutes.
- While the loaves are baking, mix up the sauce by stirring the ketchup, the brown sugar, and the mustard together until smooth. Set aside.
- After 45 minutes, take the meat loaves out and spread the sauce over the tops.
- Placed the sauced loaves back in the oven and bake for another 15 minutes or until cooked through.
- Let the meat loaves cool for 5 - 10 minutes before cutting them.
- Enjoy!
- P.S. To cook a frozen meatloaf, take the frozen meat loaf out the day before you want to cook it and let it thaw in the refrigerator. Cook as stated above.
- P.S.S. This meatloaf pairs wonderfully with my super yummy corn casserole!

My mom used to make this dish and it was always a big hit. Now it's a big hit in my house too! Also, it's still super yummy and much healthier if you sub the ground beef for ground turkey, just remember to add lots of Italian seasoning to the turkey and sauce so it's still super flavorful! Enjoy!

- Add beef, carrot, tomato sauce, Worcestershire sauce, eggs, oats, ground mustard, salt, and pepper to bowl with vegetable mixture; mix thoroughly with your hands.
- Gently press into prepared pans. Bake until an instant-read thermometer registers 160 degrees, about 25 minutes. Let stand 5 minutes; carefully remove with a spatula, and transfer to a wire rack set over a rimmed baking sheet. Tent with foil.
- Bring 2 cups water to a boil in a small pan. Add reserved carrot peels; cook until tender, about 1 minute. Using a slotted spoon, transfer to paper towels to drain.
- Place 1 meat loaf on platter; spread 1 cup warm mashed potatoes over top. Sprinkle with 3 tablespoons peas. Top with remaining meat loaf. Frost top and sides with 3 cups mashed potatoes. Fill piping bag fitted with a 1/2-inch star tip (such as Ateco No. 825) with remaining mashed potatoes. Pipe borders around cake. Using tip of a 1/4-inch plain round tip (such as Ateco No. 10), punch out circles from carrot peels. Decorate cake with carrot circles and remaining peas. Serve immediately.
Tips:
- For the best results, use a combination of ground beef and pork. This will give the meatloaf a more flavorful and moist texture.
- If you don't have bread crumbs, you can use crushed crackers or oatmeal instead.
- Be sure to mix the meatloaf ingredients thoroughly, but don't overmix them. Overmixing can make the meatloaf tough.
- When you bake the meatloaf, place it in a baking dish that is just big enough to hold it. This will help the meatloaf to cook evenly.
- Let the meatloaf cool for at least 10 minutes before slicing it. This will help it to hold together better.
Conclusion:
Meatloaf layered cake is a delicious and easy-to-make dish that is perfect for any occasion. It is a great way to use up leftover meat, and it can be customized to your own liking. With a few simple tips, you can make a meatloaf layered cake that is sure to impress your family and friends.
