2 tsp ground allspice (more for later)
1 tsp black pepper
3/4 tsp ground green cardamom (more for later)
1/4 tsp ground turmeric (more for later)
6 boneless skinless chicken thighs
Kosher salt
Extra virgin olive oil
1 cup chopped yellow onions, (about 1/2 large onion)
2 carrots, (chopped)
1 cup frozen peas
1 cup cooked chickpeas (or from canned chickpeas, drained and rinsed)
2 cups Basmati rice,
2 cinnamon sticks
1 dry bay leaf
2 cups low-sodium chicken broth, (boiling)

Steps:

  • In a small bowl, mix the spices to make the spice mixture. Set aside for now.
  • Pat chicken thighs dry and cut them into large pieces (I simply cut each in half). Season well with salt, then season with the spice mixture. Work the chicken with clean hands to make sure all the pieces are well-coated with the spice mixture. Set at room temperature for 20 minutes or so (if you have the time).
  • In a large and deep cooking skillet with a lid, heat 3 tbsp extra virgin olive oil over medium-high until shimmering but not smoking. Brown the chicken briefly on both sides. Remove from the skillet and set aside for now.
  • To the same skillet, now add onions, carrots, and frozen peas. Cook for 4 minutes or so, tossing regularly, until tender. Add the chickpeas and rice. Season with salt, 1/2 tsp allspice and 1/4 tsp ground cardamom. Stir to combine.
  • Add the chicken back to the skillet (nestle the pieces in the rice). Add the cinnamon sticks, bay leaf, and chicken broth. Bring to a boil.
  • Turn the heat to low. Cover and cook for 20 minutes or until fully cooked.
  • Remove from the heat, garnish with parsley.

4 teaspoons olive oil
1 tablespoon fresh garlic, minced
1 tablespoon dried oregano leaves, crumbled
1 teaspoon salt
1/2 teaspoon ground black pepper
1 roasting chicken (5- 5 1/4 lbs.)
1 1/4 cups chicken broth
1/2 cup red wine vinegar
1/2 cup pimento-stuffed Spanish olives
1/3 cup brown sugar, packed (light)
1 lb red potatoes, quartered (if large)
1 cup pitted prunes
fresh parsley, chopped (for garnish)

Steps:

  • Heat the oven to 400 degrees. Grease a deep, lidded roasting pan or an oval 8-qt. dutch oven with 1 teaspoons oil. Rinse the chicken and pat dry. In a small bowl, mix the garlic, oregano, remaining 3 teaspoons of oil, salt and pepper. Rub the mixture all over the chicken. Tie the chicken legs together with kitchen twine. Tuck the wing tips under the back. Put the chicken into the pan and add the broth, vinegar, and olives. Sprinkle with brown sugar. Cover and bake 1 hour, then scatter the potatoes and prunes around the chicken. Cover and bake 30 - 45 minutes longer, stirring the potatoes once, until the drumsticks move easily, the juices run clear when a thigh is pierced with a sharp knife and the potatoes are tender.
  • With a slotted spoon or spoons, remove the chicken, potatoes, prunes and olives to a deep serving platter. Pour the liquid left in the pan into a 4-cup measure. Skim off and discard the fat. Serve the juices with the chicken.

4 skinless chicken breasts (organic or free range)
2 tablespoons olive oil
1 large red onion, finely sliced
1 red pepper, thinkly sliced
3 cloves garlic, chopped
325 g long grain rice
400 ml dry white wine
1 (1 liter) carton pureed tomatoes (passata)
1 cup pitted black olives, roughly chopped
8 sun-dried tomatoes
1 bunch basil leaves, torn into pieces,save a few leaves to serve.

  • Heat oven to 180*C.
  • Season the chicken with salt and freshly ground pepper.

3 tablespoons olive oil
Two (3 1/2-to 4-pound) chickens, each cut into 10 pieces
1/3 cup dry white wine
1/2 cup red-wine vinegar
1 tablespoon Dijon mustard
1 tablespoon light-brown sugar
1 cup pitted dates, halved
6 sprigs fresh thyme
1/2 cup pitted green olives
2 tablespoons capers, drained
1 pint cherry tomatoes
Coarse salt and freshly ground pepper
1/4 cup chopped flat-leaf parsley

Steps:

  • Preheat oven to 375 degrees.
  • Heat 2 tablespoons olive oil in a large skillet over medium heat. Season chicken with salt and pepper; working in batches, add chicken to skillet, skin-side down, and cook until golden brown, 5 to 7 minutes. Turn chicken and cook 3 minutes more. Transfer to a large baking dish.
