1 pound medium red potatoes, quartered
1 cup fresh baby carrots
1 boneless beef chuck roast (3 to 4 pounds)
1/4 cup Dijon mustard
2 teaspoons dried rosemary, crushed
1 teaspoon garlic salt
1/2 teaspoon dried thyme
1/2 teaspoon pepper
1/3 cup chopped onion
1-1/2 cups beef broth
Minced fresh thyme, optional

Steps:

  • Place potatoes and carrots in a 5-qt. slow cooker. Cut roast in half. Combine the mustard, rosemary, garlic salt, thyme and pepper; rub over roast. , Place in slow cooker; top with onion and broth. Cover and cook on low until meat and vegetables are tender, 6-8 hours. If desired, top with minced thyme. Freeze option: Place sliced pot roast and vegetables in freezer containers; top with cooking juices. Cool and freeze. To use, partially thaw in refrigerator overnight. Heat through in a covered saucepan, gently stirring and adding a little water if necessary.

¾ cup milk
⅔ cup seasoned bread crumbs
2 teaspoons dried minced onion
1 teaspoon salt
½ teaspoon rubbed sage
½ cup sliced fresh mushrooms

2 tablespoons brown sugar
1 teaspoon ground mustard
½ teaspoon Worcestershire sauce

Steps:

3 cups flour
3 cups sugar
1 teaspoon salt
1 tablespoon baking soda
1 tablespoon cinnamon
1 1/3 cups carrots (grated)
1 1/2 cups oil
4 eggs
1 tablespoon vanilla
1 1/2 cups walnuts (chopped)
1 1/2 cups coconut (shredded)
3/4 cup crushed pineapple (drained)

Steps:

  • Mix dry ingredients into a bowl. Add oil, eggs and vanilla and beat well. Fold in walnuts, coconut, carrots and pineapple.
  • Pour batter into greased 9 inch layer cake pans lined with wax paper. Bake at 350 degrees for 30-35 minutes or until the edges have pulled away from the sides.
