2 eggs
¼ cup corn oil
1 cup buttermilk
1 ½ cups shredded Cheddar cheese
1 (8 ounce) can cream-style corn
1 large onion, chopped
2 fresh jalapeno peppers, seeded and minced
1 cup cornmeal
½ cup all-purpose flour
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8 inch square baking dish or a cast iron skillet.
  • In a small bowl, beat eggs. Mix in corn oil and buttermilk. Stir in 1 cup shredded cheese, creamed corn, onion, and jalapenos.
  • In a large bowl, whisk together cornmeal, flour, baking powder, soda, and salt. Stir the egg mixture into the dry ingredients. Mix well. Pour batter into prepared pan. Sprinkle remaining 1/2 cup cheese on top.
  • Bake for 30 to 35 minutes until center is set and top is golden brown.

1 medium onion, chopped
2 cups shredded cheddar cheese

My husband does not like cornbread or anything with cornmeal but always looks forward to me making this when we have beans. I have made it often and always get lots of compliments.

1 cup yellow cornmeal

6 slices of bacon
1 c cornmeal
3/4 c all-purpose flour
3 tsp sugar, or ¼ cup sugar (some people like it sweeter)
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 large eggs
1 c kernel corn
1 c buttermilk
3 Tbsp unsalted butter, melted, (or bacon grease)
1 c harp cheddar cheese (or ½ cup shredded cheddar cheese plus ½ cup shredded monterey jack cheese)
4 oz can diced green chiles, drained and chopped, (or ¼ cup jalapeño peppers, seeded and chopped)

Steps:

  • 1. In a fry pan, add bacon and start frying the bacon. When bacon beings to curl, flip it with a fork. Continue cooking the bacon until it is done.Using tongs, remove the pieces from the pan and onto paper towels to drain. Set aside. When bacon is cool, then break up into small/medium pieces. Reserve the bacon grease. Set aside.
  • 2. Preheat oven temperature to 425º F. Place the cast iron skillet into the pre-heated oven until grease is very HOT, (approximately 8 minutes).
  • 3. In a large bowl whisk together cornmeal, flour, baking, sugar, powder, baking soda, and salt.
  • 4. If there are too many lumps remaining after whisking... simply sift the ingredients together.
  • 5. Pour bacon grease and drippings into the cast iron skillet. PUT the cast iron skillet back into the pre-heated oven until grease is very HOT.
  • 6. In a separate medium sized bowl, combine and whisk together eggs, buttermilk, diced green chiles, and melted butter.Then add the diced green chiles, well drained.
  • 7. Add the corn, cheese and bacon to the buttermilk mixture, mixing to combine.
  • 8. Add the wet mixture into dry ingredients. Stirring only until incorporated, Do NOT Over Mix.
  • 9. Open oven door, pulling the rack out; carefully swirl the grease around, coating bottom evenly. CAREFULLY, pour cornbread batter into cast iron skillet.
  • 10. Close door and bake 23- 25 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  • 11. When the cornbread is done, remove cornbread from oven and cool for 10 to15 minutes.Then cut and serve while warm.

1 cup plain white flour
2 tablespoons sugar
4 teaspoons baking powder

1 egg, lightly beaten
1/2 cup jalapeno pepper, drained and chopped

1 package (8-1/2 ounces) cornbread/muffin mix
1/3 cup fat-free milk
1 large egg, lightly beaten
1 cup frozen corn, thawed
3/4 pound extra-lean ground turkey
1 small onion, chopped
1 small sweet red pepper, chopped
2 jalapeno peppers, seeded and chopped
3 tablespoons reduced-sodium taco seasoning
1/2 cup water
3/4 cup shredded reduced-fat Mexican cheese blend
1 small tomato, chopped
1/4 cup sliced ripe olives
2 green onions, chopped
6 tablespoons reduced-fat sour cream

Steps:

  • In a small bowl, combine the cornbread mix, milk and egg. Stir in corn just until blended. Spread evenly into a 10-in. ovenproof skillet coated with cooking spray. Bake at 400° for 14-18 minutes or until a toothpick inserted in the center comes out clean., Meanwhile, in a large nonstick skillet, cook the turkey, onion, red pepper and jalapenos over medium heat until meat is no longer pink; drain. Stir in taco seasoning and water; bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. , Spoon turkey mixture over cornbread; sprinkle with cheese. Bake for 5-10 minutes or until cheese is melted. Sprinkle with tomato, olives and green onions. Cut into six wedges; top each with sour cream.

2 box cornbread mix
1 lb ground beef
1 small can chopped greeen chilies
1 pkg taco seasoning mix
1 can(s) regular corn
1 can(s) creamed corn
1 1/2 c cheddar cheese, shredded

Steps:

  • 1. Brown ground beef add taco seasoning per package directions; add green chilies; set aside. Mix cornbread per package directions; to corn bread add 1/2 can creamed corn and 1/2 regular corn add 1/2 of cornbread mixture in bottom of 9x13 pan. On top of cornbread put meat mixture, remaining can of corn and cream corn over that; add 1/2 of cheese. Top remaining cornbread mixture and cheese all over the top. Bake at 350F for 35-40 minutes. Let set 5 minutes. Cut into squares. Serve with sour cream, lettuce, guacamole , tomatoes or whatever you like.

This is spicy, if you want to reduce the heat, then omit the jalapeño or Tabasco sauce. This is a really tasty dish, and the cornmeal topping just by itself is good baked in an 8x8-inch buttered baking dish, I baked mine for about 25 minutes at 350 degrees!

1 onion, chopped
2 tablespoons chopped fresh garlic (to taste)
1 small green bell pepper, chopped
1 jalapeno pepper, seeded and finely chopped
oil, as needed
1 1/2 lbs ground pork
1 (16 ounce) can tomato sauce
2 tablespoons tomato paste
1 (10 ounce) bag frozen corn, thawed
1 (14 ounce) can black beans, drained
1 tablespoon cumin
1/2 teaspoon allspice
2 -4 tablespoons chili powder
2 tablespoons Worcestershire sauce
1 teaspoon Tabasco sauce (or to taste)
1 tablespoon yellow cornmeal (heaping)
seasoning salt (can use white salt)
pepper
1 cup flour
1 cup yellow cornmeal
3 tablespoons sugar (can use white or brown)
2 teaspoons baking powder
1/4 teaspoon salt
4 tablespoons melted butter
3/4 cup half-and-half or 3/4 cup milk
1 large egg
1 cup grated cheddar cheese or 1 cup monterey jack cheese
1 (4 ounce) can green chili peppers (just throw in the whole can with juice)

Steps:

  • Grease a 4-quart baking dish (or a large enough baking dish to hold the mixture).
  • For the filling: In a large skillet cook the onion, garlic, jalapeño pepper and green bell pepper in oil until the onion is softened (about 4-5 minutes).
  • Add in ground pork; cook until the pork is no longer pink, stirring and breaking the mixture up with a wooden spoon.
  • Stir in tomato paste, thawed corn, black beans, cumin, allspice, chili powder, Worcestershire sauce, Tabasco sauce, cornmeal, salt and pepper; mix well to combine, and bring to a simmer, stirring occasionally for about 35 minutes (adding in more Tabasco sauce to taste.
  • Spoon the mixture into prepared baking dish.
  • To make the cornmeal crust: In a bowl sift together flour, cornmeal, sugar, baking powder and salt.
  • Add in melted butter, milk and egg; stir until JUST combined.
  • Add in grated cheese and chili peppers.
  • Spread or drop the batter by large spoonfuls around the edge of the casserole, or you can spread completely over the pork filling.
  • If you are spreading the batter around the edge of the dish, you can sprinkle grated cheddar on top of the pork mixture in the middle of the dish, but that is optional.
  • Bake in the second-lowest oven rack at 350 degrees for 35-40 minutes or until the cornmeal crust is baked and the filling is bubbly.
