1 pie crust, unbaked
1/2 cup sliced almonds
1 cup whipping cream, whipped
10 ounces raspberries
1 tablespoon lemon juice
1 teaspoon almond extract
3 egg whites
1 cup sugar

Steps:

2 cups chopped pecans
2 quarts (4 pints/1/2 gallon) chocolate ice cream, softened
2 1/2 cups chocolate-coated toffee pieces
50 chocolate sandwich cookies
1 1/2 sticks (12 tablespoons) butter, melted
2 quarts (4 pints/1/2 gallon) vanilla ice cream, softened
2 1/2 cups chocolate shell ice cream sauce, such as Magic Shell
Store-bought caramel sauce, warmed, for serving

Steps:

  • Line an 8-quart bowl with overhanging plastic wrap.
  • Tip the coffee ice cream into the bowl and smooth the surface. Sprinkle over the chopped pecans and freeze until the ice cream is firm, at least 1 hour.

1 tsp. salt
2 T. milk
1/2 cup vegetable oil
FILLING: 1 1/2 cup berries
1 cup sugar
2 egg whites
a T. lemon juice
1/2 pt. whipping cream

  • CRUST: Mix first 3 ingredients in a 10" pie plate. Add 2 T. milk to 1/2 oil and whip with fork. Pour into flour mixture and mix well, Press evenly over pie plate and up sides of pan with back of spoon or fingers. Bake 12 to 15 min. in preheated 425 degree oven until golden. FILLING: Beat egg whites till fluffy. Add berries, sugar and lemon juice. Beat at high speed for no less than 15 minutes. Whip cream in separate bowl, when completely whipped, fold into berry mixture incorporating it thoroughly. Fold this mix into cooled pie plate and freeze. Serve sliced, still frozen.
