Time 25m

Yield MAKES 12

Number Of Ingredients 9

125g softened butter
100g dark brown soft sugar

5 tbsp mincemeat (check the label if you're vegetarian)

  • Scoop tablespoons of the mixture onto two lined baking sheets, leaving a bit of space between each so they can spread. Tips:

  • Use fresh mincemeat: Fresh mincemeat has a brighter flavor and a more complex texture than store-bought mincemeat. If you can, make your own mincemeat using a recipe from a trusted source.
  • Don't overmix the dough: Overmixing the dough will make the cookies tough. Mix the dough just until the ingredients are combined.
  • Chill the dough before baking: Chilling the dough before baking will help the cookies hold their shape and prevent them from spreading too much.
  • Bake the cookies until they are just set: Overbaking the cookies will make them dry and crumbly. Bake the cookies until they are just set, then remove them from the oven and let them cool on a wire rack.
  • Serve the cookies warm or at room temperature: Mincemeat cookies are best served warm or at room temperature. You can also store the cookies in an airtight container at room temperature for up to 3 days.

Conclusion:

Mincemeat cookie bars are a delicious and easy-to-make holiday treat. They are perfect for parties, potlucks, and cookie exchanges.
