BACON AND POTATO FRITTATA WITH GREENS

Bacon and Potato Frittata with Greens image

This is a wonderful meal anytime of day or night. My grandfather used to make frittatas quite often. Instead of finishing a frittata under the broiler he would cook it halfway, put a plate on top of the pan, flip the pan over, and slide the frittata back into the pan to cook the other side. Sometimes a frittata would stick; other times the hot oil would drip on him as he performed this maneuver. It was during these moments that I learned all the really good Italian curse words I still use to this day.

Tips:

  • Prep Your Ingredients: Before starting, ensure all your ingredients are measured, chopped, and ready to go. This will make the cooking process smoother and faster.
  • Choose the Right Pan: Use an oven-safe skillet that is large enough to accommodate all the ingredients comfortably without overcrowding. A 10-inch skillet is a good option.
  • Don't Overcook the Potatoes: The potatoes should be tender but still have a slight bite to them. Overcooking will make them mushy.
  • Use Fresh Herbs: Fresh herbs like rosemary, thyme, or chives add a burst of flavor to the frittatas. If you don't have fresh herbs on hand, you can use dried herbs, but use half the amount.
  • Don't Skip the Cheese: The cheese adds a gooey, flavorful element to the frittatas. Use a good quality cheese that melts well, such as cheddar, mozzarella, or Parmesan.
  • Let the Frittatas Cool Slightly Before Serving: This will help them hold their shape when you slice them.

Conclusion:

Mini Bacon and Potato Frittatas are a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. They are easy to make and can be customized with your favorite ingredients. Whether you prefer classic bacon and potato, or want to add some extra vegetables or cheese, these frittatas are sure to please.
