Steps:
- To make the meatballs: Whisk the first 7 ingredients in a large bowl to blend. Stir in the cheese and bread crumbs. Mix in the beef, veal, and pork. Using about 2 tablespoons of meat for each, shape the meat mixture into 1 1/4 to 1 1/2-inch-diameter meatballs. Place on a baking sheet.
- Heat the oil in heavy large frying pan over medium-high heat. Working in 2 to 3 batches, add the meatballs and saute until browned on all sides, about 5 minutes. Using a slotted spoon, transfer the meatballs to a plate. Pour off any excess oil. Return all the meatballs to the pan. Add the Marinara Sauce. Simmer over medium-low until the sauce thickens slightly and the flavors blend, about 10 minutes. Season the sauce, to taste, with salt and pepper. (The meatball mixture can be made 1 day ahead. Cool, then cover and refrigerate. Rewarm over medium heat before continuing.)
- To make the sandwiches: Spoon the hot meatballs with some sauce over the bottoms of the rolls. Place 1/2 slice provolone on top of meatballs and sprinkle with the Parmesan. Spread more sauce over the roll tops, then fold the tops of the rolls over and serve.
- In a large casserole pot, heat the oil over a medium-high flame. Add the onions and garlic and saute until the onions are translucent, about 10 minutes. Add the celery, carrots, and 1/2 teaspoon of each salt and pepper. Saute until all the vegetables are soft, about 10 minutes. Add the tomatoes and bay leaves, and simmer uncovered over low heat until the sauce thickens, about 1 hour. Remove and discard the bay leaves. Season the sauce with more salt and pepper, to taste. (The sauce can be made 1 day ahead. Cool, then cover and refrigerate. Rewarm over medium heat before using.)

KITTENCAL'S MINI MEATBALL MINESTRONE SOUP
This is a delicious rich soup that will need a longer cooking time then most soups and tastes even better the next day it's really a meal in itself, I serve it with garlic bread on the side --- to save some time prepare the meatballs up to a day ahead, the meatball mixture may be doubled if desired, if you don't use all the meatballs then freeze for another time and just drop them into the soup frozen -- 1/4 to 1/3 cup dry red wine may be added to the soup :)

Steps:
- 1. In a deep pot, over medium heat, add oil, chopped carrots, celery, and onion and bay leaves. (I use my mini-processer and finely chop carrots and onions) Season with salt and pepper. Cover and cook veggies for 5 or 6 minutes, stirring occasionally.
- 2. While veggies cook, combine meat, egg, garlic, grated cheese, bread crumbs, salt, pepper, and nutmeg in a seperate bowl.
- 3. Uncover your soup pot and add broth and water to the pot. Increase heat a bit and bring soup to a boil. When soup boils, reduce heat a bit and start to roll meat mixture into small balls, dropping them straight into pot. You are making meat dumplings that will cook in the broth. When you are done rolling the meat, add the pasta to soup and stir. Cover and simmer soup for 10 to 20 minutes. Remove the 2 bay leaves. When pasta is tender, stir in chopped spinich in batches. When spinich is wilted, soup is done. Adjust your seasonings if needed.
- 4. I do not add the spinach. I add more meatballs or noodles. A person could put in kale instead.
MINI MEATBALL SANDWICHES
Steps:
- Mix meat with bread crumbs, garlic, salt, pepper, and milk. Knead together with hands. Roll into heaping tablespoon-sized rolls. Heat olive oil in a large skillet over medium heat. Add onions and cook for one minute. Add meatballs between the onions and brown for one minute. (You might have to do this in two batches, depending on the size of your skillet.) Pour in jar of marinara; shake pan gently to mix. Put on lid and allow to simmer for 20 minutes. When ready to serve, cut each dinner roll in half. Place a wedge of Provolone on the top and bottom of each roll. Spoon a meatball with the sauce onto the bottom bun; top with the top bun.
Tips:
- Use a large skillet to prevent overcrowding. This will ensure that the meatballs cook evenly and don't steam.
- Don't overcrowd the skillet. If you do, the meatballs will steam instead of brown.
- Use a combination of ground beef and ground pork. This will give the meatballs a richer flavor.
- Add some bread crumbs to the meatball mixture. This will help to bind the meatballs together and keep them from falling apart.
- Season the meatball mixture well. Use a variety of herbs and spices to create a flavorful meatball.
- Roll the meatballs into small, even-sized balls. This will help them cook evenly.
- Brown the meatballs in a hot skillet over medium heat. This will create a nice crust on the outside of the meatballs.
- Reduce the heat to low and cook the meatballs through. This will take about 10-12 minutes.
- Serve the meatballs with your favorite sauce. You can use a tomato sauce, a cream sauce, or even a barbecue sauce.
Conclusion:
Mini meatballs are a delicious and versatile appetizer or main course. They're easy to make and can be customized to your liking. With a few simple tips, you can make perfect mini meatballs every time. So next time you're looking for a quick and easy meal, give mini meatballs a try. You won't be disappointed!
