Tourtiere Du Quebec (French-Canadian Meat Pie) image

I grew in Quebec and always looked forward to Christmas to be able to eat meat pies. When I married & moved to the US, I took the recipe with me, no way I can spend Christmas without the smell of cooking meat pies. Luckily for me, hubby & kids are hooked. I've been making this recipe for years, delicious.

Time 1h35m

Yield 1 pie, 4-6 serving(s)

Number Of Ingredients 13

1/3 lb ground beef
1/3 lb ground pork
1/3 lb ground veal
1 small onion, finely chopped
1 small potato, grated
1 small garlic clove, crushed
1/2 teaspoon salt
1/4 teaspoon celery salt
1/4 teaspoon clove
1/8 teaspoon cinnamon
1/8 teaspoon nutmeg

1 pastry for double-crust pie

Steps:

  • Place all the ingredients (except for pie shell) in a sauce pan and bring to boil and cook uncovered for 20 minutes over medium heat.
  • Cool the meat mixture and pour in pastry lined pan. Note: I like to cool mine in refrigerator over night if time permits.
  • Cover with the top crust, cut steam vents and bake in a 400F oven until golden, about 45 minutes.
  • Freeze well.
  • Note: If ground pork and ground veal cannot be found, you can use meatloaf mix which is all 3 meat but I'm not sure of the ratio.

TOURTIERE A L'ORIGNAL (FRENCH CANADIAN MOOSE MEAT PIE)

Tourtiere a L'orignal (French Canadian Moose Meat Pie) image

This is my Memere's tourtiere recipe, tweaked a bit, but don't tell her that. One does not mess with a French woman's meat pie recipe, lol. All the men in my family are moose hunters. This is one way we use the ground moose meat. Moose meat is very lean so do not cut back on the ground pork.

TOURTIERE TARTS

Tourtiere Tarts image

Tourtiere is a French Canadian meat pie that is traditionally served on Christmas Eve. I first ever had these at the home of a French Canadian friend..I have been making them at Christmas time as a make ahead appetizer for years now. It can be made into one individual pie, but I prefer the individual tarts..I freeze these individually on cookie sheets and then vacuum seal in my bagger or can be stored in a plastic container.

MME BENOIT'S TOURTIèRE

Mme Benoit's Tourtière image

Tourtière is a French Canadian meat pie which is traditionally served at Christmas. It may be made from pork, beef or a combination of meats sometimes including veal. Different regions in Quebec have their own traditional recipes. Some regions use game such as hare or duck rather than beef and pork. The pies should not have too much filling as they are just a part of the whole traditional Christmas dinner. It's usually served with tomato ketchup. This recipe is the creation of Mme Jehane Benoit, a famous Quebec cooking expert who received the Order of Canada for her contributions to Canadian cuisine. I found this recipe on recipesource.com and on blogger.com where it was posted by Lizzy Ferland. It is originally from the Canadiana Cookbook.

Time 1h15m

Yield 1 pie, 4 serving(s)

Number Of Ingredients 9

1 lb ground beef (or combination of beef and pork, or beef, pork & veal)
1 small onion, chopped
1 garlic clove, minced
1/2 teaspoon salt
1/4 teaspoon celery salt
1/4 teaspoon clove, ground (a must for authentic Quebecois pie)
1/2 cup water
1/4-1/2 cup breadcrumbs
pastry for a double-crust 9-inch pie, of your choice

Steps:

  • Place all ingredients except breadcrumbs and pastry in a saucepan.
  • Bring to a boil and cook, uncovered, over medium heat for 20 minutes.
  • Remove from heat and add a 3 or 4 spoonfuls of breadcrumbs.
  • Let mixture stand for 10 minutes.
  • If the fat is sufficiently absorbed by the breadcrumbs, do not add more. If not, add more crumbs in the same manner.
  • Cool mixture and spoon into a pastry-lined pie plate.
  • Cover with crust and bake at 400F until golden brown (follow directions for pie crust you chose).
  • Serve hot.
  • NOTE: Cooked tourtière may be frozen for 4 to 5 months and does not need to be thawed before reheating.
  • To reheat, place your frozen tourtiere (covered in foil) in a medium oven and bake until a knife inserted in the center is hot when you pull it out.

Tips:

  • For a crispy crust, use a combination of pork and beef. The pork will give the crust its flavor, while the beef will help to keep it crispy.
  • Use a well-seasoned cast iron pan. This will help to evenly distribute the heat and prevent the tourtière from sticking.
  • Preheat the oven to 375 degrees Fahrenheit before baking the tourtière. This will help to ensure that the crust cooks through evenly.
  • Bake the tourtière for about 1 hour, or until the crust is golden brown and the filling is bubbly.
  • Let the tourtière cool for at least 15 minutes before serving. This will help to set the filling and make it easier to slice.

Conclusion:

Tourtière is a delicious and hearty dish that is perfect for a winter meal. It is easy to make and can be tailored to your own taste preferences. With a crispy crust, flavorful filling, and plenty of gravy, tourtière is sure to be a hit with your family and friends.
