Time 20m

Number Of Ingredients 5

2 c confectioner's (powdered) sugar
2 Tbsp cocoa powder
3 Tbsp vegan butter
2 oz cold strong coffee, more as needed (or use vanilla rice milk if you don't like coffee
1 tsp bourbon vanilla

Steps:

  • 1. Beat the sugar and cocoa powder to incorporate the vegan butter coffee and vanilla. If you need more liquid, add a small amount at a time. Beat for two minutes or so until smooth. If you need to stiffen the frosting, add a little more confectioner's sugar.
  • 2. Chill the frosting before using it. I chill it, covered, for roughly an hour. Frost the cupcakes. Cover in an air-tight container until serving. If making ahead of time, chill frosted cakes briefly in the freezer before wrapping individually and freezing.

Tips:

  • For a richer frosting, use full-fat coconut milk.
  • If you don't have powdered sugar, you can make your own by processing granulated sugar in a food processor or blender until it's fine.
  • To make sure the frosting is thick enough, chill it for at least 30 minutes before using.
  • If the frosting is too thick, you can add a little bit of milk or cream until it reaches the desired consistency.
  • For a mocha flavor with a bit of a kick, add a teaspoon of instant coffee powder to the frosting.
  • Garnish the frosting with chocolate chips, chopped nuts, or cocoa powder for an extra special touch.

Conclusion:

This dairy-free mocha frosting is a delicious and versatile frosting that can be used on cakes, cupcakes, and other desserts. It's easy to make and can be customized to your liking. Whether you're looking for a classic mocha flavor or something with a little more kick, this frosting is sure to please.
