¼ cup shortening
¼ cup brown sugar
½ cup white sugar
1 egg
3 tablespoons vanilla extract
4 teaspoons instant coffee
½ cup warm water
1 teaspoon cocoa powder
½ teaspoon baking soda
1 ⅓ cups all-purpose flour
2 cups quick oats
6 ounces white chocolate chips, or more to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.

1 cup butter, softened
1/2 cup firmly packed brown sugar
1/2 cup granulated sugar
2 large eggs
1 1/2 teaspoons vanilla
1 tablespoon instant coffee granules, dissolved in 1 T hot water (If desired coffee can be eliminated, substitute 1 T milk for the hot water)
1 3/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
2 1/2 cups Quaker Oats, uncooked (quick or old fashioned, for old fashioned oats, add 2T additional flour)
1 1/2 cups semi-sweet chocolate chips
1 1/2 cups coarsely chopped toasted walnuts
1 1/2 cups miniature marshmallows

  • Heat oven to 350°F.
  • Spray cookie sheets with cooking spray.
  • Beat butter and sugars with electric mixer until creamy.

1 1/4 cups flour
1 cup chopped nuts (Divided 1/2 and 1/2, peanuts are my favorite, almonds are good too)
1/8 teaspoon salt
1/3 cup sugar
1 teaspoon vanilla
1 cup mini marshmallows
1/2 cup semi-sweet chocolate chips

Steps:

  • Beat together butter, sugar and vanilla until creamy. Stir in flour and 1/2 cup of chopped nuts.
  • Roll dough into small balls and flatten slightly, place on lightly greased cookie sheet. Bake at 350 until lightly browned about 15 minutes.
