2-1/2 pounds new red potatoes, quartered
2 tablespoons vegetable oil
2 tablespoons molasses
2 tablespoons balsamic vinegar
1 tablespoon dried thyme, crushed
1/2 teaspoon salt
1/2 cup chopped walnuts
1/4 cup minced chives

Steps:

  • Place potatoes in a 13-in. x 9-in. baking dish coated with cooking spray. In a small bowl, combine the oil, molasses, vinegar, thyme and salt. Drizzle over potatoes and toss to coat. , Bake, uncovered, at 350° for 30 minutes. Stir in walnuts. Bake 30-35 minutes longer or until potatoes are tender, stirring once. Sprinkle with chives.

1 1/2 pounds medium red bliss or other waxy-style potatoes, skin-on and scrubbed
2 tablespoons unsalted butter, melted
1 teaspoon kosher salt, plus more
1 tablespoon finely minced garlic
1 tablespoon finely chopped flat-leaf parsley
Freshly ground black pepper

Steps:

  • Preheat oven to 375 degrees F.
  • Half the potatoes lengthwise and cut them into 1-inch-wide wedges. In a medium bowl, toss the potatoes with the butter and 1 teaspoon of salt. Spread the potatoes out on a roasting pan large enough to hold them in a single layer. (Arrange the potatoes cut-side down, to ensure crisply browned edges.)
  • Roast the potatoes until golden brown, about 45 minute. Add the garlic and stir to coat the potatoes evenly. Continue to roast until the potatoes and garlic are evenly browned, about 15 minutes more. (Take care that the garlic doesn't burn.) Remove from the oven and mix with the parsley. Season with salt and pepper to taste. Serve.

I made these potatoes recently, they are simply outstanding! it's a perfect potato side dish to a holiday meal. I doubled the amounts and baked it in a small roaster pan. I also used lots of black pepper, you may also want to increase the salt amount if desired.

2 1/2 lbs red potatoes (unpeeled and quartered)
2 tablespoons vegetable oil
2 tablespoons molasses
2 tablespoons balsamic vinegar
1 teaspoon dried thyme (rubbed between fingers to release the flavors)
1 teaspoon salt
1/2 cup coarsley chopped walnuts
1/4 cup minced chives

Steps:

  • Butter a 13 x 9-inch baking dish.
  • Dry potatoes with paper towels then place in a medium bowl.
  • In a small bowl combine oil with molasses, vinegar, thyme and salt; drizzle over the potatoes in the bowl and toss to coat.
  • Place the potatoes into the prepared baking dish (drizzle any extra molasses mixture into the baking dish also).
  • Bake uncovered at 350 degrees for about 20 minutes.
  • Stir in the walnuts.
  • Continue to bake, stirring once for another 20-25 minutes or until the potatoes are fork-tender.
  • Sprinkle with chives.
  • Do not overcook the potatoes.

3 large sweet potatoes or 3 lbs sweet potatoes
2 tablespoons unsalted butter
1 teaspoon kosher salt
1/4 cup orange juice
1/2 tablespoon brown sugar
1 tablespoon molasses
1 teaspoon ground cumin
2 tablespoons maple syrup

Steps:

  • Preheat the oven to 400 degrees F. Place sweet potatoes on a baking sheet and roast until easily pierced with a fork, about 1 hour.
  • Peel the skin off of the sweet potatoes while still hot. By hand or mixer, smash potatoes until all large chunks are gone.
  • Combine the potatoes, butter, salt, orange juice, brown sugar, ground cumin, molasses and maple syrup in a large bowl. Continue to mix all together until all lumps are gone.
  • Adjust any of the seasonings to your specific tastes. Can be made the day before.

1/4 teaspoon salt

6 large sweet potatoes (about 6 pounds)
4 tablespoons (1/2 stick) unsalted butter
2 teaspoons coarse salt
1/2 cup freshly squeezed orange juice
1 tablespoon light-brown sugar
2 tablespoons molasses
1/4 cup maple syrup

Steps:

  • Preheat oven to 400 degrees.
  • Place potatoes on a baking sheet and transfer to oven. Roast until easily pierced with a fork, about an hour. Let potatoes cool slightly; remove skin and discard.
  • Transfer potatoes to the bowl of an electric mixer fitted with the paddle attachment; beat until smooth. Add butter, salt, orange juice, sugar, molasses, and maple syrup; beat until butter is melted and mixture is well combined. Serve immediately or store, covered and refrigerated, up to 1 day.
