1 3/4 cups freshly grated Parmesan
1 1/2 cups panko (Japanese breadcrumbs)

2 large eggs
3 medium zucchini, cut into 3-inch long by 1/2-inch wide strips

2 medium sized zucchini
(approximately 2 inch diameter and at least 8 inches long)
Vegetable Oil - enough to cover the bottom of the frying pan.
1 cup (at least) grated parmesan and pecorino romano cheese blend.
Sliced Fresh Italian Bread
1 yellow banana hot pepper (optional)

Steps:

  • Clean and slice the zucchini. (about 1/8 - 1/4 inch thick) Prepare a platter or large dish by lining it with paper towel. Heat oil in frying pan. When oil is hot enough to fry, place a layer of zucchini slices in pan. After about 2 minutes turn over the slices of zucchini. The cooked side should be slightly browned. The zucchini slices will be tender and golden. Place the fried zucchini on the prepared platter. Immediately sprinkle with grated cheese. Pile hot zucchini slices on a slice of fresh, italian bread. Fold the bread over and enjoy. Note: If you want spicey hot zucchini, fry the hot pepper in the oil prior to frying the zucchini.
