MOM'S GOULASH IN THE MICROWAVE

Mom's Goulash in the Microwave image

There were no microwaves when my mom made this, so she did it on the stove top. She never gave us the recipe and I have discovered it through trial and error. You never forget the taste! I started with a recipe in a microwave cookbook and have adjusted the ingredients over time. If anyone is home when you are cooking, you will have company in the kitchen! Serve with Caesar salad, oven-baked garlic butter French bread and red wine. Microwave temperatures vary, so keep checking to see if these power levels work for you.

MOM'S SIMPLE GOULASH

Mom's Simple Goulash image

I actually think my mom got this from an aunt of mine...so simple and you can add anything! We added a couple of things to the original...

Time 45m

Yield 4 serving(s)

Number Of Ingredients 10

1 lb lean hamburger
1 medium green pepper, chopped
1 sweet onion, chopped
1 1/2 cups elbow macaroni, cooked (or any other type of small pasta)
1 (8 ounce) can tomato sauce
1 (14 1/2 ounce) can stewed tomatoes
1 (8 ounce) can sliced mushrooms
italian seasoning (to taste)
ground black pepper (to taste)
salt (to taste) or garlic salt (to taste)

Steps:

  • Fry hamburger, pepper, and onion in large skillet.
  • Drain fat if needed (if you're not sure, you can also only cook the macaroni part way so that while simmering the uncooked pasta will soak up excess moisture when added to the mixture).

  • Add macaroni and heat through.

Categories     Pasta     Tomato

Number Of Ingredients 13

1 package (8 ounce) elbow macaroni, uncooked
1 pound ground beef
1 cup onion, diced
1 cup celery, sliced
1 tablespoon garlic, minced
1 can (14.5 ounce) diced tomatoes
1 can (10 ounce) tomato sauce
1 tablespoon sugar
1 tablespoon paprika
1 teaspoon dried oregano
1/4 teaspoon caraway seed
1 pinch (or to taste) cayenne pepper
1 teaspoon salt

Steps:

  • Bring a pot of lightly salted water to a boil. Add the macaroni, and cook until tender, about 8 minutes. Drain.
  • Meanwhile, crumble the ground beef into a 2 quart or larger casserole dish. Add the onion, celery and garlic. Cook in the microwave on High for 5 to 6 minutes, or until beef is no longer pink. Stir once during cooking. Drain off the grease.
  • Stir the tomatoes, tomato sauce and sugar into the beef, and season with paprika, oregano, caraway seed, cayenne pepper and salt. Cover, and cook in the microwave on power level 8 for about 14 minutes, or until celery is tender and the flavors have blended.
  • Remove from the microwave, and mix in the cooked macaroni. Cook for 2 to 3 more minutes, until heated through. Serve.

Tips:

  • Use a large enough bowl: The mixture will expand as it cooks, so make sure you have a bowl that is large enough to accommodate it.
  • Don't overcook the pasta: The pasta should be cooked al dente, or slightly firm to the bite. Overcooked pasta will become mushy.
  • Use a microwave-safe bowl: This is essential for safety reasons. Make sure the bowl is labeled as microwave-safe before using it.
  • Stir the mixture halfway through cooking: This will help to ensure that the mixture cooks evenly. Microwave for an additional 2-3 minutes, or until the pasta is cooked to your desired doneness.
  • Add cheese and seasonings to taste: Once the pasta is cooked, stir in your desired amount of cheese and seasonings. Serve immediately.
  • For a creamier goulash: Add 1/2 cup of milk or cream to the mixture before cooking.
  • For a spicier goulash: Add 1/4 teaspoon of cayenne pepper or chili powder to the mixture before cooking.
  • For a vegetarian goulash: Omit the beef and add an extra cup of vegetables.

Conclusion:

Microwave goulash is a quick and easy meal that is perfect for busy weeknights. It can be easily customized to your own taste preferences, and it is a great way to use up leftover vegetables and pasta. So next time you're looking for a quick and easy meal, give microwave goulash a try!
