1/3 cup brown sugar
2 tablespoons ground cumin
1 tablespoon ground coriander
1 tablespoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper
1-2 teaspoons kosher salt (to taste (I like salty so I go for 2))
1/2 teaspoon freshly ground black pepper
1 egg white
1 pound raw almonds (about 3 cups)

Steps:

  • Preheat oven to 300 degrees Fahrenheit. Line a rimmed baking sheet with parchment paper.
  • In a medium bowl, stir together the brown sugar, spices, salt, and pepper.
  • To another medium bowl, add the egg white. Whisk briskly until frothy, about 30 seconds. Add the almonds and toss with a wooden spoon until coated. Add the spice mix and toss until the nuts are well-coated. Spread evenly on the baking sheet.
  • Place in oven and bake, stirring once, until fragrant and toasted, about 45 minutes. Let cool completely and then serve. Nuts will keep well at room temperature in a sealed bag or jar for several days.

1 ½ teaspoons kosher salt
1 teaspoon cayenne pepper
2 ½ cups whole almonds
1 tablespoon water
1 tablespoon honey
1 teaspoon olive oil

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Spread the almonds onto a baking sheet, and toast until the nuts start to turn golden brown and become fragrant, about 10 minutes. Watch the nuts carefully as they bake: they burn quickly.

1 cup peanuts, unsalted
1 cup pistachios, unsalted
3 tablespoons ras el hanout spice mix
1 tablespoon salt
juice of one lime

Steps:

  • In a bowl mix the lime juice, spice and salt. Add the nuts and stir until well coated.
  • Bake on a low oven at 300F/150?C/Gas mark 2 for one hour, stirring the nuts from time to time. Allow to cool before serving and store in an air-tight container.

  • Moroccan Sweet & Spicy mixed nuts:.
  • Add 2 TB honey and 1 TB water to the spice mix. Repeat the cooking process as above.

6 cups vegetable stock
3/4 cup sliced almonds, toasted and divided
1/2 cup plus 2 tablespoons minced fresh cilantro, divided
2 tablespoons olive oil
1 to 3 teaspoons harissa chili paste or hot pepper sauce
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1-1/4 teaspoons salt
1/2 teaspoon pepper
Additional harissa chili paste, optional

Steps:

  • In a 5- or 6-qt. slow cooker, combine cauliflower, vegetable stock, 1/2 cup almonds, 1/2 cup cilantro and the next 7 ingredients. Cook, covered, on low until cauliflower is tender, 6-8 hours., Puree soup using an immersion blender. Or cool slightly and puree soup in batches in a blender; return to slow cooker and heat through. 3 tablespoons flour
2 tablespoons olive oil
1 large onion, halved and cut into 1/4 inch slices (about 1 cup)
1 1/2 teaspoons ground cinnamon
1 teaspoon ground cumin
1/2 teaspoon ground ginger
1/2 teaspoon turmeric
1 can chicken broth
2 tablespoons lemon juice
1/2 teaspoon salt
1 cup pitted and quartered dates
1/3 cup whole blanched almond

  • Coat chicken with flour.
  • Heat oil in large deep skillet or Dutch oven over medium heat.
